    About gram flour laddu

    Gram flour laddu is made by slowly roasting gram flour in ghee until it turns golden brown and gives off a pleasant aroma throughout the kitchen. Then it is mixed with sugar and shaped into a smooth round ball. Its taste is very good and it feels like melting in the mouth.

    The taste of roasted gram flour with ghee, sugar and cardamom gives a comforting feeling that makes you eager to eat more. This sweet is usually made during festive times or family occasions.

    It is a simple traditional sweet made with very few ingredients but tastes great. The main secret is to roast the gram flour on low flame until it reaches the desired texture. Adding cardamom powder further enhances its taste and its aroma also becomes divine.

    Every family has its own recipe for making gram flour laddus. Some people add some rava for crunch, some add ground dry fruits for texture. I mostly add roasted cashews for crunch and cardamom powder for added flavour.

    Ghee gives nice aroma and helps in shaping the laddu easily without breaking. Gram flour laddu is a tasty and aromatic laddu, which melts as soon as it goes in your mouth. It is quick and easy to make and is one of the most popular laddu recipes.

    I often make gram flour laddus on special days or whenever I feel like eating something sweet and simple. This is one of the easy and quick sweets to make on Diwali, which does not require any prior soaking or grinding etc.

    Gram flour laddu ingredients

    • gram flour flour – I used good gram flour. You can use coarse gram flour available in the market. Fry slowly on low flame to get the right texture and nice golden colour.
    • Sugar – I have used finely ground sugar, it adds sweetness and blends well with the roasted gram flour. Do not use normal sugar, it will not mix easily.
    • Ghee – I used homemade ghee for rich aroma and smooth texture. This adds good taste and helps the laddu to retain its shape. If the mixture seems dry then you can add some more ghee.
    • cardamom powder – I always add cardamom powder, it gives a mild sweet aroma and enhances the flavor and taste.
    • Cashew – I dry roasted it, chopped it finely and added it to the laddu mixture. It gives a nice crunch in every bite.
    • pistachio – I added chopped pistachios on top for look and taste.

    How to make gram flour laddu recipe step by step

    1. Dry roast 2 tablespoons finely chopped cashews for 2 minutes, take them out in a bowl and keep aside.

    2. Heat ¼ cup + 1 tbsp ghee and add 1 cup gram flour to it.

    3. Fry it on low flame until the color changes. Keep stirring continuously to prevent burning at the bottom. At first it will look crooked like this.

    4. Continue frying and after a few minutes it will become moist.

    5. After a few more minutes it will become thin and loose – don’t panic, this is the consistency we want. Switch off immediately.

    6. Transfer to a mixing bowl, mix with a spatula and cool completely. Cooling completely is an important step.

    7.Put ½ cup sugar in a mixer jar.

    8.Grind it finely. If you want the texture of your laddu to be a little coarse, then grind it a little coarsely.

    9. Add roasted cashew nuts and powdered sugar along with ¼ teaspoon cardamom powder. Make sure you add the powdered sugar only after the mixture has cooled completely.

    10. Mix it well.

    11.Start shaping – First pinch one part and shape it with closed fingers and fist.

    14.Repeat this to finish other laddus also. Add chopped pistachios on top and press lightly so that it remains intact.

    Expert Tips

    • roasting gram flour Fry on low flame only. Keep stirring otherwise it may burn and taste bitter. You will know it is cooked when it turns golden and its texture changes, becoming loose and thin as shown.
    • Sugar – Keep in mind that add powdered sugar to it only after the mixture cools completely. If you add it while it is hot, the sugar will melt and the mixture will become loose.
    • Ghee – Add ¼ cup + 1 tbsp ghee which will be perfect. If it is still dry add additional 1 teaspoon.

    Yes, you can also use fine powder of jaggery. But make sure it is clean before mixing. But traditionally only white sugar is used.

    3.Why is my laddu not holding its shape?

    Add some more melted ghee and mix again. Shape while the mixture is hot.

    4.My mixture does not loosen while roasting as shown, what should I do?

    After roasting for about 10-12 minutes, add 1-2 spoons of additional ghee and it will become thin.
