    Fruit and Nut Cookies are colorful little sweets, soft on the inside and slightly crunchy on the edges. They’re filled with chopped nuts and dried fruits, making every bite feel a little special. It also tastes great with tea or cold milk. These cookies are a good snack any time, especially during Christmas or some special occasions.

    You can make this cookie when you want something that looks attractive but is easy to cook at home. The mix of fruits and nuts adds both flavor and texture, so it feels like there’s a little surprise in every bite. This is a cookie that fills the eyes, heart and tummy all in one.     About Fruit and Nut Cookies

    Fruit and nut cookies are eggless buttermilk cookies made using dried fruits and nuts with flour, butter, and sugar. The dough is soft and smooth, after baking the cookies come out slightly crispy on the edges and soft from inside. You can make them small or slightly larger, either way they taste great.

    Dried fruits Cranberries, apricots and grapes add a tart-sweet flavor, and pistachios and other nuts add a slight crunch. The flour and butter base gives it a light richness without making it too heavy. You can also add your favorite nuts or dry fruits, depending on what you have at home.

    These cookies are very versatile and can be made ahead of time as the dough keeps well in the fridge. The log method is nice because you can slice as needed and bake fresh cookies every time. If you want cookies quickly, you can also roll small balls and bake them directly.

    I usually make these when friends come over because they look colorful and a little fancy. They also make nice little gifts in jars or little boxes and everyone loves them.

    These Fruit and Nut Cookies were so buttery and delicious with the crunch of nuts and dry fruits that we loved them, they looked a lot like Karachi biscuits and tasted great too.

    • flour/maida – I have used it for soft cookie bases, it gives smooth dough. I sometimes use wheat flour but the cookies will be a little denser.
    • butter -For a smooth, creamy dough I used butter at room temperature. I sometimes use homemade or store-bought, salted or unsalted salt with slight adjustments.
    • Castor sugar – I used it for sweetness and good mixing. I sometimes replace it with brown sugar but the color will change slightly.
    • vanilla essence – I add it for taste and smell, gives a light aroma. I sometimes use almond or any essence of my choice.
    • dried cranberries – I use these for their intense sweetness and slight chewiness. I also sometimes use some dried fruit like cherries.
    • Munakka/Raisins – I add these a little for sweetness, chopping them for an even mixture. If I want less sweets I leave out.
    • pistachio – I use these for crunch and color, finely chopped works best. Sometimes I replace it with almonds or cashews.
    • Apricot – I chop them finely and mix them for a slightly spicy taste. I also sometimes use dates or figs.

    6.I used half the dough for this cookie. Chop dry fruits and nuts. Now add dry fruits and nuts to half of the prepared dough.

    7.Mix it well so that the dry fruits and nuts are evenly distributed. Now give it a log shape and place it on butter paper.

    8.Wrap it well, keep it in the fridge for at least 1 hour. Cut the log. Preheat the oven at 180 degrees Celsius for 10 minutes.

    9. Cut it neither too thick nor too thin. Place it in a baking tray covered with aluminum foil. Bake in the preheated oven for 10-12 minutes or until the edges are golden.

    • chilling the dough – I make sure to cool the logs before slicing, this helps to get neat cookie shapes. If the dough seems soft, I refrigerate it occasionally.
    • cookie slicing – I try not to cut it too thick or too thin, otherwise the baking time will change. I usually use a sharp knife for even slices.
    • cooking time – I keep an eye on the edges, they turn golden first. I don’t overcook, the cookies become crisp once they cool.
    • Mixing Fruits and Nuts – I usually fold the dough gently after kneading it, ensuring even distribution. I sometimes press a few extra nuts on top for the look.
    • storage – I store it in an airtight container once it’s completely cooled, keeping it in the fridge for several weeks. For long term storage I sometimes separate the layers with butter paper.

    • 1 cup leveler flour/maida
    • one and a half cup butter at room temperature
    • one and a half cup powdered sugar / icing sugar
