These are made from cornflakes coated in honey-butter sugar syrup and lightly baked until crisp, usually set in paper cupcake cases.
The main purpose of cooking these honey delights is to make them crisp and intact. The mixture of butter, honey and sugar sets well in cupcake liners with a cornflakes wrapper. As the mixture cools after baking, the syrup hardens, causing the cornflakes to bind together into sweet, crunchy clusters in cupcake or muffin liners. The kids love these so I make these occasionally, especially during the holiday season.
Honey Joys are known for their rich honey flavour, buttery aroma and light yet satisfying crunch. Honey Joys are easy to prepare, require only a few basic ingredients, and do not require any advanced baking skills. Because of their bright, look and long shelf life, they are commonly made for Christmas celebrations, school events, bake sales and children’s parties.
When I first made these I didn’t think they would be so addictive. Since then I make a big batch to store and save the kids’ snack boxes. Both my kids run after me for it and keep asking for more. Not only kids but adults too will go crazy over it, be sure to try it and enjoy as a holiday gift.

- cornflakes – The main ingredient that provides a light and crispy texture. They absorb the butter honey sugar mixture and become crisp when cooked. It is best to use unflavored cornflakes.
- Honey – Gives honey their characteristic natural sweetness and mild floral flavor, while also helping to bind the cornflakes together.
- Sugar – Helps the mixture slightly caramelize during baking, creating a golden color and a firm, crisp finish.
- butter – Adds a rich flavor and smooth texture to the syrup, enhancing flavor and preventing the mixture from becoming too harsh.

How to Make Honey Joys Step by Step
1. Arrange cupcakes or muffin liners in muffin pan.


2. Add cornflakes to a mixing bowl.


3. In a saucepan add 3 tbsp butter (45 g), 3 tbsp + 1 tsp sugar (40 g) and 1 tbsp honey.


4. Cook on low medium flame. Keep stirring slowly.


5.Continue cooking until it becomes foamy. Switch off immediately.


6.Mix it with cornflakes.


7. Mix it well.


8. Spoon the mixture into muffin cases.


9.Repeat to finish. It took me about 7 o’clock. Preheat the oven at 150 degrees Celsius for 10 minutes.


10.Bake in preheated oven at 150 degrees Celsius for 10 minutes.


11.Cool them completely and store.


Enjoy as a snack or dessert.

- cornflakes – Use fresh cornflakes for great crispiness and crunch. If they are old they may become chewable.
- melting syrup -Use low medium or low flame for melting. Take care that the sugar does not burn, so keep stirring on low flame and do not leave it unattended.
- to boil – Once the mixture becomes foamy turn off the switch. Do not over boil as the syrup may become hard and will not mix with the cornflakes.
- Coat Cornflakes – Immediately pour the hot syrup into the cornflakes and mix them gently until combined. Avoid crushing and breaking them. Whole flakes create better texture and appearance.
