Faluda is a cold dessert enjoyed in many parts of India. It is made by coating cooked vermicelli, soaked vegetable seeds, fruits and cold milk. Ice cream is added on top making it extra creamy and rich. This sweet is mostly served in tall glasses. It also looks quite colorful and attractive.
The taste of Faluda is slightly sweet and very cold. Sabja seeds also help in cooling the body and digestion. Vermicelli gives great taste and fruits give freshness. Milk makes the base creamy and smooth. The ice cream on top finishes it off perfectly and makes it rich. Once everything is ready, assembly is very easy and quick.
You can make falooda easily based on what you have at home. You can add jelly, rose syrup or even leave out some toppings. Some people find it too sweet and some find it mild. This can be easily adjusted according to taste. Many versions of this are also available. It is also perfect for serving guests.
I usually make falooda on summer weekends. It doesn’t require much cooking but does require a little preparation. Both the children love falooda and enjoy it when it is made at home.


Falooda Ingredients
- Milk – For creamy taste I have used full cream milk. This makes falooda tasty and soft. You can use low fat milk but the taste may change slightly.
- Sugar – I have added sugar for sweetness. Adjust as per your taste. You can add more or less.
- great vermicelli – I have used fine vermicelli for the falooda layer. It gives a soft bite. You can also use Falooda Sev.
- vegetable seeds – I have soaked the sabja seeds to cool them. It helps digestion and adds a nice texture, soak it well.
- crazy – I just used chopped almonds and pistachios. It adds crispness and richness. You can also add cashew nuts.
- Fruit – I have added mixed fruits of my choice. It gives freshness and complexion. Use any seasonal fruit.
- vanilla ice cream – I put a scoop on top. This makes falooda creamy and royal. You can use any ice cream flavor.

How to make Faluda step by step
1. Take a handful of fine vermicelli. Boil water and add it. The water should be slightly higher than the immersion level.


2. Cook until soft. Wash it well, filter it and keep it aside.


3. Soak the sabja seeds in water, filter them and keep aside. Roughly chop the jelly and keep aside


4. Boil the milk, let it cook for 15 minutes or until it thickens slightly, turn off and keep aside to cool. Add sugar and mix well.


5. Pour the milk in a jug and keep it in the refrigerator. Chill the glass you are going to use to serve falooda. Now add chopped jelly.


6. Add cooked vermicelli.


7.Then add soaked sabja seeds into it.


8. Add fruits and nuts.


9.Then add cold milk into it.


10.Finally add a scoop of ice cream, garnish with nuts, fruits and jelly. Serve immediately.


Expert Tips
- cooking vermicelli – I usually cook the vermicelli until soft and wash them thoroughly. Do not overcook otherwise it will become mushy.
- milk thickness – I boil the milk until it thickens a little. This gives better taste. Let it cool completely before using.
- vegetable seeds – I soak the sabja seeds thoroughly until they swell. Do not use dry seeds directly.
- chilling – I cool the milk and glass before collecting it. Cold falooda tastes more delicious.
- served – I always serve it immediately after assembling. If kept for a long time, the layers may mix and lose texture.
