    Rasmalai is a popular Indian sweet made using cheese balls, milk, sugar, dry fruits, cardamom and saffron. Once your homemade Rasgulla is ready, it is possible to prepare it very quickly. Sweet and juicy rasgullas soaked in sweetened condensed milk are very tasty and can be easily made at home. Learn how to make delicious Rasmalai at home with step-by-step pictures.

    Rasmalai is a rich Indian dish, rasgullas in sweetened condensed milk flavored with cardamom and saffron, topped with dry fruits, it is a delicious combo!! To make Rasmalai quickly, you can use store bought Rasgullas. Rasmalai is widely served at weddings, parties and is also a popular order in restaurants.

    In Hindi ‘ras’ means juicy and ‘malai’ means cream, hence rasmalai translates to juicy and creamy. Rasmalai is a popular rich Indian dessert made using cheese balls soaked in sweetened condensed milk, called rabri, topped with dry fruits and flavored with saffron and cardamom. It is highly addictive because it tastes incredibly delicious.

    Ever since I tasted Rasmalai at a popular hotel called Annapurna Gaurishankar here in Coimbatore, I have become a big fan of it. Homemade food is best if prepared in the right consistency. I buy rasgullas from shops and make rasmalai. Sometimes I also make homemade Rasgulla because Mitthu loves that sweet.

    Rasgullas can be flattened and put as is. I have seen rasmalai in the form of balls and discs so you can make it as per your wish. I would prefer smaller balls instead of discs as it looks more attractive.

    Rasmalai Ingredients

    • Rasgulla – You can use store bought mini rasgullas or use homemade ones. Make sure to use small rasgullas for best results.
    • Milk – Use full cream milk either fresh milk or packaged milk.
    • Sugar – It is best to use white granulated sugar for Rasmalai.
    • condensed milk – Condensed milk makes Rasmalai delicious.
    • crazy Cashews, pistachios and almonds are used.
    • flavoring Cardamom powder and saffron are used to make milk tasty.

    How to make Rasmalai step by step

    1. Take a pan – add condensed milk along with 1 cup of milk in it and beat well. Now add the remaining milk and let it boil on medium flame for 5 minutes. Keep stirring. Crush saffron threads and add them to it. After adding saffron the color of milk will turn light yellow. Let it boil for at least 15 minutes until it thickens.

    2. Then add chopped nuts and cardamom powder, mix and let it boil. – Now take your rasgullas. This time I used store bought rasgullas.

    3.Take a lemon squeezer and squeeze out the excess syrup from the rasgullas. Be soft otherwise the rasgullas will break. Now put the rasgullas in milk and let it boil for 5-7 minutes on low flame. Switch off.

    Cool for a few minutes, then refrigerate for at least an hour. serve chilled!

    Expert Tips

    • Taste – Do not use too much saffron, it will be too strong and will spoil the taste.
    • add more – Adding condensed milk not only makes Rasmalai delicious but also makes it extra tasty and gives it a unique taste.
    • syrup – You can also use the sugar syrup that comes with the rasgullas and add it to the rabri instead of sugar.
    • Rest time – Allow time to sit and cool for at least 30 minutes before serving for better flavor.
    • quick option – You can also use store bought rasgullas, canned rasgullas are easily available.

    Rasmalai is best when served cold. Keep in the fridge and it stays good for 2-3 days.
