I made these biscuits recently and they became an instant hit at home. I had Valentine’s Day on my mind so had already planned this post, I love Jim Jam biscuits and these are no exception. I’m sure this is a kid delight as my little one enjoyed it a lot. Although at first he licked only the jam, but later he liked the taste of biscuits also.

About Jam Biscuits
Jam biscuits are melt in the mouth type of biscuits made using flour, custard powder, sugar, curd and jam. These look very attractive and children will like them very much. Adding custard powder to these biscuits gives it a unique flavor and taste.
Jam biscuits can be easily made at home with the instructions given here. If you follow the exact measurements and method I am sure even beginners in baking can master these biscuits as it is very easy without any complicated steps.

Jam Biscuit Ingredients
- Flour – You can use all purpose flour or wheat flour.
- Custard Powder, Corn Flour – Custard powder and corn flour add texture and flavor to the biscuits.
- Jam – I have used mixed fruit jam, you can use jam of your choice.
- Curd, butter – Curd and butter increase fat sources.
- Sugar – Use white granulated sugar.
- vanilla extract – Use good quality vanilla extract.
How to make jam biscuits
- Mix flour, cornflour and custard powder and keep aside. Soften the butter, add sugar to it and cream it well. Then add curd, vanilla essence and beat well until it becomes creamy.
- Then add the custard powder mixture to the butter-sugar mixture and knead a soft dough. If your dough is sticky then add a little flour to it and make it a soft and flexible dough.
- Roll out the dough on a flat surface using a chapatti roller to approximately 5 mm thickness. Then cut out shapes using cookie cutters. Gather remaining dough and repeat the process.
- Preheat the oven at 180 degrees Celsius for 10 minutes. Meanwhile, with the help of a small round lid, make a small depression in the middle of all the biscuits and apply a very thin layer of jam in it. Place it in a baking tray lined with aluminum foil. Bake it at 180 degrees Celsius for 12-15 minutes. Let it cool and store in an airtight container.


Expert Tips
- As soon as I reduced the butter and replaced it with curd, the biscuits puffed up a bit and the jam started oozing out. So on the next batch I applied a very thin layer of jam. So do not add more jam, it will definitely leak out.
- Although the butter is reduced, the crispiness is perfect. The only difference I found in reducing the butter was that the biscuits started getting soft after 3 days. I am sure it will remain crisp longer if the original amount of butter is added.
- I used mixed fruit jam, you can use your favorite flavor of jam. But the mixed fruits tasted good with the custard powder.

- 1 cup flour/maida
- ¾ cup custard powder
- ¼ cup thick curd
- 2 tablespoon butter
- one and a half cup Castor sugar
- 1 tablespoon corn flour
- one and a half small spoon vanilla extract
- Mixed Fruit Jam As needed
