    Nungu Sarbath is a refreshing cold drink made by mixing Nungu with Nannari Sarbath and served chilled. It is prepared very quickly and does not require cooking at all. The drink tastes delicious with its syrupy color and chunks of soft nungu in every sip. It is mostly made during summers as this drink is a thirst quencher.

    It has a mild sweet taste with the earthy flavor of Nannari and the soft juicy flavor of Nungu. Adding a little lemon juice adds a slight spiciness that balances the sweetness. It is a great alternative to packaged drinks and carbonated beverages. You can make this when fresh nungu is available in the market, it tastes very cool and light.

    About Nungu Sarbath

    Nungu Sarbath is a popular street style summer cooler in many parts of South India. The fresh palm fruit is peeled and lightly mashed so that it blends well with the drink. Instead of blending completely smooth, it is just mashed so that you can feel small soft pieces while drinking. That texture makes it more enjoyable.

    Nannari syrup is made only from sarsaparilla root and has an earthy sweet flavor. It becomes very refreshing when mixed with cold water and nungu. The syrup also gives the main color to this drink. If the syrup is dark the drink will look dark, if it is light the color will be light.

    Lemon juice is optional but I like to add it. It just adds a little bit of spiciness and reduces the sweetness. The ice cubes make it more cooling and soothing, especially on a hot afternoon. The drink is not heavy but still satisfying. It hardly takes ten minutes but looks very special when served chilled in a tall glass.

    • cold water – I put everything together to mix. This makes the drink light and refreshing, you can adjust the flavor as per your liking.
    • ice cubes – I added some ice cubes to make it cool and refreshing to drink. If the water is already cold enough you can skip it.
    • lemon juice – I add just a little lemon juice for tartness and slight freshness. This balances out the sweetness, but is completely optional if you don’t like it.
