About carrot laddu
Carrot Laddu is a quick variation of traditional Laddu where grated carrots are cooked and shaped into balls. In this recipe, carrots are roasted in ghee and then cooked with condensed milk until it thickens. There is no need for separate sugar as the condensed milk provides enough sweetness and richness.
The texture of this laddu is soft and slightly sticky. Carrots become soft when cooked and mixed well with condensed milk. Ghee makes the laddus tasty and helps in shaping them easily. The dry fruits added on top add a little crunch and extra flavor.
There are a few variations you can try with this recipe. You can also add cardamom powder for more flavor or add different dry fruits for topping. People also add milk powder to it to make it more tasty. You can adjust the sweetness by adding more or less condensed milk as per your taste. It is easy to make and everyone in the house likes it.
I usually make carrot laddu when I have fresh carrots at home and want to make a quick dessert. Rich in the goodness of carrots, this laddu is healthy and is eaten with gusto on special occasions.
