    Beans Poriyal also known as Green Beans Stir Fry is a traditional South Indian side dish made by cooking beans with onions, coconut, lentils and tempering spices. Beans Poriyal is a healthy side dish and is usually served with rice meals. Learn how to make Beans Poriyal with step by step pictures.

    Beans Poriyal with Moong Dal is my favorite that Amma makes so I want to share its recipe here. It is a quick stir fry made with beans and pairs well with rice and sambar as a great side dish.

    About Beans Poriyal

    Poriyal is a Tamil word for stir fried or sautéed dish, so beans Poriyal is a stir fry made with green beans. Beans Poriyal is made by roasting green beans with onions, spices, moong dal and finally mixing them with coconut.

    This is a very simple yet healthy stir fry that can be made with many vegetables. Poriyal or stir fry can be made with many vegetables like ladyfinger, carrot, cauliflower, cabbage, bitter gourd etc.

    Poriyal is commonly made in every Indian household, it is basically a simple stir fry with any vegetable of your choice. Here I have used round green beans but you can also take the Chinese long bean variety.

    Beans Poriyal Ingredients

    • beans – Round green beans are best for stir-fries. You can also use the Chinese long bean variety.
    • Bean lentil – Yellow moong dal is cooked with beans which gives a unique taste to this stir fry.
    • Onion – Roasted onion gives crunch to this dish
    • Coconut – Coconut added at the last stage gives good taste to this stir fry.
    • tempering – A basic tadka is made using mustard seeds, urad dal, hingam]curry leaves etc.

    How to make Beans Poriyal step by step

    1. Pressure cook the moong dal for 1 whistle and keep it aside. – Heat oil in a pan, add mustard seeds and let it crackle. Now add urad dal, curry leaves and asafoetida. Add onion, green chilli and fry until transparent.

    2. Add beans and sauté for 3 minutes. – Now add about ½ cup of water, cover and cook on medium flame until the beans become soft but not mushy, now add salt as per taste.

    3. Keep on low flame to avoid burning. When the beans are cooked, add moong dal and stir. Add coconut, mix quickly and turn off.

    Serve with sambar rice or any variety of rice of your choice.

    Expert Tips

    • Choose tender fresh beans. You can use Chinese long beans or regular round beans.
    • You can also cook moong dal with beans. It cooks quickly.
    • Cut the beans into ½ inch thickness.
    • You can also add half a teaspoon of sambar powder for extra flavour.
    • If you are packing for lunch box, then fry it well after adding coconut, this keeps the Poriyal good for a long time.
    • To maintain the green color, you can add a pinch of turmeric powder to it.
    • You can also replace fresh coconut with desiccated coconut, although the taste will not be the same.

    Serve Beans Poriyal with rice and sambar for a great combo. It also tastes great with rasam. It keeps well in the refrigerator for 1 day.

    Material

    • 15 beans finely chopped
    • 2 tablespoon Bean lentil
    • 2 tablespoon Coconut tight
    • 1 Onion finely chopped
    • Salt to taste

    To get angry:

    • one and a half small spoon mustard seeds
    • one and a half small spoon urad dal
    • A Pinch hing
    • Some? Curry leaf
    • 1 Green chilly (cut in half)
    • 1 tablespoon Oil

    Instruction
