Beautiful Podi is a simple delicious masala mixture that is useful when making Sundal or even vegetable stir fries. It is made with basic ingredients such as coriander seeds, urad dal, gram dal and red chili which are roasted and grind and collected a little coarse powder. The taste is soil, spicy and walnuts that add good depth to any dish.
This powder is quite important during the festival when we make Sundal. But honestly I always keep it ready because it is also useful beyond Sundral. Just sprinkle on the porials, curry or even add a spoon to the sambar to lift the taste. It takes only a few minutes to get ready but stays properly for weeks.

About beautiful podi
Sundal is a popular healthy South Indian movement fry made with beans or lentils. The beautiful podi is the South Indian Spice Mix that is mainly designed to make Sundal, a healthy legume dish that is usually made during festivals. The combination gives a balanced taste that goes very well with ripe legumes.
Unlike the stores purchased masala powder, this homemade Sundal Podi has a fresh aroma and taste due to dry roasting. Chana dal and urad dal add the base of walnuts while coriander brings heat and chili spices. The texture is usually kept slightly thicker so that it is well mixed with Sundal.
This podi is not only for beautiful, it can be used for bustling fries, curry, kuzambu varieties etc. You can toss the vegetables with it, sprinkle on the curry, or even mix a spoon with warm rice and ghee for a quick diet. Some families also roast black pepper and cumin so that the taste changes slightly as well.
I usually make a small batch of this powder once a month. It saves time during the busy morning, I just cook Sundal and add this pod. The taste seems to have tried a lot, although it is very early.

Sundal podi material
- Coriander seeds – I have used coriander seeds as the mainstay. It gives the taste of hot soil and also gives the pod. You can use any type of coriander seeds.
- Gram party – I have redeemed chana dal till Golden. It adds crisp of walnuts and gives powder to the body. If you do not have gram lentils, you can change with a little more urad dal.
- urad dal – I have added it to balance and taste. It gives a mild aroma when roasted and helps to tie the podi well with Sundal. You can also use split urad dal.
- red chilli – I have used both small red chili. It gives good spices and color to the powder. You can accommodate the number of chillies depending on the preference of your spices.

How to step Beautiful Podi step by step
1. In a pan, add cup coriander seeds, 2 tbsp of full urad dal, 2 tbsp gram dal and 6 red chili.


2. Start roasting, fry in low medium flame. Stir continuously to roast spices.

Service and storage
To make Sundal, serve beautiful podies mixed with ripe beans. You can sprinkle the vegetable stir, sprinkle on the poriyal or even add to the gravy to taste. I sometimes mix it with warm rice and ghee when I want something quick and simple. Store Podi in airtight container. It lasts well for about 3-4 weeks at room temperature, but you can also cold to keep for a long time. Always use dried spoon to take it out.

1. Can I add black pepper to beautiful podi?
Yes, you can add. Black pepper gives good heat and taste, I sometimes add while making vegetable curry.
2. Can I use this pod for rice?
Yes, of course. Just mix a spoon with warm rice and ghee, this is a really good taste.
3. How can I store Sundal Podi?
You can store it for about a month at room temperature in airtight jar.
4. Do I need to use gingali oil while making sundal with this pod?
You can use any cooking oil, but Gingeli oil gives authentic taste so I like it.
5. Can I make Podi very well?
Yes, you can, but I like to keep a little thick. Fine powder is also fine, but thick mixes better with a beautiful.
