Cauliflower curry is a very simple and delicious dish which also goes well with roti and rice. So after Gobi Manchurian this is my favorite with cauliflower. It can be made gravy like or dry as per your choice.

About Cauliflower Curry
Cauliflower curry is made using cauliflower, onion, tomato puree along with spice powders including turmeric powder, red chilli powder, coriander powder and garam masala powder. This is a quick and easy curry that can be made instantly.
This cauliflower curry can be made quickly and easily with just a few ingredients. It takes just 30 minutes from start to finish. You can use this recipe for other vegetables like baby corn, corn, mushrooms etc.

Cauliflower Ingredients
- Cauliflower – Choose fresh cauliflower. – Clean it well and cut it into small pieces.
- Tadka – A simple tadka is made using oil, mustard, cumin and curry leaves

- Masala Powder – Turmeric powder, red chili powder, coriander powder and garam masala powder are added
- Ginger Garlic Paste – Ginger garlic paste enhances the taste of this dish.
How to make cauliflower curry step by step
1. Cut cauliflower florets into bite-sized pieces and boil it in water with salt and turmeric powder until soft but firm enough. Filter it and keep it aside. Heat oil in a pan – add the ingredients listed under ‘For tempering’ and let it splutter. Then add onion and ginger garlic paste and fry until it turns light brown.


2. Then add tomato puree along with red chilli, coriander and garam masala powder and salt. Let it boil well until the raw smell of tomatoes goes away. Then add boiled cauliflower.


3. Mix well with gravy. Keep it on low flame, sprinkle less than ¼ cup water, cover and cook on low flame for 5 minutes. Turn occasionally to prevent burning. After a few minutes the water will have dried. Mix once, garnish with coriander leaves and close.


Serve with any paratha or different types of rice.
Expert Tips
- While frying onions, you can also add tomatoes instead of puree. To make the gravy more delicious, you can also add 2 tomatoes to it.
- Garam masala powder is completely optional, but I like its taste so added it.
- You can add whole spices and leave out the garam masala powder.
- Add kasoori methi at the last step for unique taste.
serving and storage
Cauliflower curry goes well with roti, rice, pulao etc. It keeps well in the refrigerator for up to 2 days, you can reheat it and serve it.

- 1 small sprig curry leaves
