Chilli Garlic Noodles is a delicious dish that I keep making again and again whenever I feel like eating something spicy and tangy. This is one of the most loved street style dish which is easy to make and tastes amazing every time. If you like garlic and spices like me then this is a perfect recipe.
This recipe has a spicy garlic flavor, it is very comforting. The best part is how quickly it is ready once the noodles are cooked. Just add some garlic, sauce and you’re done. The noodles remain soft but not mushy and the smoky flavor from frying on high flame is what makes it so good.
If you want to make it more colorful and healthy, you can add some vegetables like carrots, cabbage or capsicum to it. Sometimes when I want more spicy taste I also add some schezwan sauce to it. Honestly, every version is good. This recipe has that texture, smell and taste, everything is in just the right place.
I usually make it for dinner or for lunch for my kids. You can make it a little less spicy for kids. It always ends quickly in my house. But I like Hakka noodles more than instant noodles.
For Chilli Garlic Noodles recipe, traditionally chilli oil is used to give the spicy flavor and taste but here I have used chilli paste roasted in oil to replicate the taste and it turns out so good that we all loved it. Although I don’t like spicy food but noodles are definitely an exception. Don’t be fooled by the color and appearance of the noodles, it is very spicy and delicious!


Chili Garlic Noodles Ingredients
- noodles – I use Hakka noodles. They cook soft but not sticky. You can use any noodles of your choice.
- Garlic – I used more garlic for good taste and aroma in the dish. If you want less garlic flavor you can add less, but I like to add more.
- red chilli paste – I added homemade red chili paste. It gives good color and spice. You can also use store-bought paste or replace it with dried chili pieces.
- chilli flakes – You can use it instead of paste. Sometimes when I run out of chili paste I add it. It gives light crispness and dry heat.
- soy sauce – I have used light soy sauce which adds deep flavor and a little saltiness. It adds that distinct Indo Chinese touch.
- vinegar – I used vinegar to bring out the spicy balance in the spices. If you want, you can also use lemon juice.
- green onion – I have added it while frying garlic and also for garnish at the end. This adds freshness and slight crispness to the noodles.
- freshly ground black pepper – I used black pepper powder to balance the spice and add some heat. You can skip it if you prefer a lighter version.
- olive oil – I used olive oil to fry the garlic and sauce. This imparts a mild flavor and keeps the noodles shiny.

How to make Chili Garlic Noodles step by step
1. Boil water, add hakka noodles.


2.Cook with necessary salt. Cook until the noodles are soft and firm enough to bite. Don’t crush it. Rinse the noodles immediately with cold water to prevent them from overcooking. Drain the water using a colander. Dip the noodles in some oil and keep aside.


3. Heat oil in a pan – add chopped garlic and white part of green onion, fry for a minute. Keep the flame on medium high flame.


4. Add soy sauce, vinegar and chilli paste.


5. Cook on high flame for one minute. Adjust salt if necessary. Finally add cooked noodles and toss.


6. Stir until the sauce coats the noodles evenly. Add remaining green onions and turn off.


serve hot!


Serve hot with side dish of your choice or any Manchurian.

serving and storage
Remove from the pan and serve hot with any dry manchurian or stir fry. It also tastes great with Paneer Chilli or Gobi Manchurian. I like to eat it plain sometimes, topped with chili vinegar and fried garlic cloves.
You can keep it in an airtight container in the refrigerator for a day. Before serving again, heat it in a pan with a few drops of oil. Avoid heating in the microwave for too long as this may dry out the noodles.

1.Can I add vegetables?
Yes of course, you can add chopped capsicum, carrot or cabbage. It adds color and extra crispiness.
2.Can I skip the vinegar?
Yes, you can skip it or add some lemon juice instead. It has a slightly tart taste, almost like vinegar.
3.Can I use other noodles?
Yes, you can also use spaghetti or any plain noodles. Just make sure it’s not too thick.
4.Is it too spicy?
You can control the spices as per your taste. I sometimes make a lighter version for kids.
5.Can I use butter?
You can use butter but I think olive or regular oil gives better texture and shine.
