      Peel, core, and slice 3 medium apples into ¼-inch thick pieces. In a medium bowl, combine apples with ¼ cup granulated sugar, 1 tbsp all-purpose flour, ½ tsp ground cinnamon, ¼ tsp ground nutmeg, and 1 tbsp fresh lemon juice. Toss to coat and set aside.

      In a large bowl, whisk 1 cup all-purpose flour, ½ cup granulated sugar, ½ cup packed light brown sugar, 1 tsp ground cinnamon, and ½ tsp salt. Add ½ cup very cold, cubed unsalted butter. Use a pastry blender or fingertips to cut butter into the dry ingredients until it resembles coarse crumbs with pea-sized pieces. Chill in the refrigerator.

      Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.

      In a medium bowl, whisk together 2 ½ cups all-purpose flour, 1 tsp baking powder, ½ tsp baking soda, and ½ tsp salt. Set aside.

      In a large mixing bowl, cream 1 cup softened unsalted butter and 1 ½ cups granulated sugar on medium speed for 3-5 minutes until light and fluffy. Beat in 2 room temperature large eggs, one at a time, scraping down the bowl after each. Stir in 1 tsp vanilla extract.

      With mixer on low speed, alternately add the dry ingredient mixture and 1 cup room temperature buttermilk to the wet ingredients, starting and ending with dry. Mix just until combined; do not overmix.

      Pour half of the cake batter into the prepared pan and spread evenly. Spoon the prepared apple filling over the batter. Carefully dollop the remaining cake batter over the apple layer and spread gently. Retrieve the chilled crumble topping and generously sprinkle it over the entire cake surface.

      Bake for 50-65 minutes, or until a wooden skewer inserted into the center (avoiding large apple pieces) comes out clean or with a few moist crumbs. If the topping browns too quickly, loosely tent with aluminum foil. Remove from oven and cool completely in the pan on a wire rack (2-3 hours).

      While the cake cools, combine ½ cup apple cider/juice, ¼ cup granulated sugar, ¼ tsp ground cinnamon, and a pinch of salt in a small saucepan over medium heat. Bring to a gentle simmer, stirring occasionally until sugar dissolves. Simmer for 8-12 minutes, stirring periodically, until the liquid thickens slightly and reduces by about one-third to a syrupy consistency. Remove from heat, stir in 1 tbsp unsalted butter and ½ tsp vanilla extract. Let cool slightly until warm (not piping hot).
    10. Step 10
      Once the cake is completely cooled, generously drizzle the warm Cinnamon Apple Drizzle over the top. Slice into squares and serve at room temperature. Optional: serve with vanilla bean ice cream or freshly whipped cream. Store leftovers tightly covered at room temperature for up to 3 days, or refrigerated for up to 5 days.
