Easy and delicious dry fruits and dry fruits kheer is prepared in minutes. Only the milk reducing part takes time, otherwise if you have dry fruits powder it will be done quickly. I always have dry fruits powder as I make and store it in bulk, use a spoon to make kheer/rabri.


Dry Fruits Kheer Ingredients
- Milk – To make the kheer creamy and rich, I have used full cream milk. If you want, you can also use low fat milk.
- Sugar – This adds sweetness to the kheer. You can adjust how much you add or leave out the figs if they are already very sweet.
- Fig – I just cut it into a few pieces and added, it gives a nice sweetness and chewy texture to the kheer. You can change the dates if you want.
- Raisin – I added raisins for a little sweetness. They provide soft chewability. You can omit or use sultanas instead.
- condensed milk – This adds sweetness to the kheer and makes the kheer a little thick. If you want a lighter version then you can skip it but then cook on low flame for longer time.
- ground nuts – I have used cashews, almonds and pistachio powder. This makes the kheer creamy and nutritious.
- chopped pistachios – I used chopped whole pistachios for garnishing. This increases the crispiness and taste. You can use any dry fruits for topping.
- Ghee – I have used melted ghee to fry figs and raisins. It adds aroma and light richness. You can skip if you want.
- saffron strands – I have added a pinch of saffron just for color and aroma. If not available you can skip.

How to make Dry Fruits Kheer step by step
1. Roast the nuts until they turn light brown. Then grind it coarsely. I made it in bulk to store. I measured ¼ nuts powder and used it here.


2. Take milk in the pan. Boil it till it reduces a little.


3. Then add saffron threads, sugar and let it boil for 10 minutes on low flame.


4.Now add condensed milk and nuts powder to it. Keep cooking on low flame. Scrape down the sides and keep stirring to avoid burning on the bottom.


5. Cut the figs into small pieces. – Heat ghee in a tadka pan, add raisins and chopped figs and fry for a minute.


6.Then mix it in the milk nuts mixture. keep cooking


7.At one stage it will thicken and coat the ladle. This is the correct step, switch off. Garnish with chopped nuts and serve chilled.

Expert Tips
- Choose good quality nuts – I usually choose fresh cashews, almonds and pistachios. Old dry fruits give less taste.
- grind dry fruits coarsely – I have found that coarse grinding works best, do not over grind or the kheer will become sticky.
- lightly fry dry fruits – I added the raisins and figs to the melted ghee for a few seconds. Gives good aroma and makes fruits soft.
- scrape the sides while baking – I usually scrape the sides of the pan so that the milk does not stick to the bottom.
- adjust stability – Kheer becomes thick when it cools, stop it when it coats the ladle lightly. If you want it thicker then boil more.
serving and storage
Serve it as a dessert during festivals or immediately after meals, chilled or lukewarm. You can keep the remaining kheer in the refrigerator for a day, it tastes good the next day also. Avoid storing it for a long time as milk and figs release water and the kheer may become watery.

Yes, you can use only cashews or pistachios. Slight change in taste but kheer still tastes good.
