    The bacon was sizzling when I realized I’d forgotten burger buns. Again. Lina was not happy about eating “burger bowls.” Then I spotted flour tortillas in the back of the pantry. I rolled cooked beef, crumbled bacon, and shredded cheese into the tortillas, brushed them with garlic butter, and baked them for fifteen minutes. The smell garlic, toasted tortilla, melted cheese filled the kitchen. Lina took one bite and cheese stretched from his mouth to the plate. “Way better than regular burgers,” he said. He ate three. They’re faster than regular burgers, way less messy, and Lina actually finishes his dinner instead of leaving a pile of soggy bun on his plate.     Plus, they reheat really well, which almost never happens with burger-type foods. I usually make a double batch now and stick half in the fridge. Lina takes them in his lunch the next day he says they’re better cold than the cafeteria pizza, and coming from a kid who would eat pizza for every meal if I let him, that’s pretty high praise. I’ve even caught him eating one for breakfast before school, which I’m choosing not to think too hard about. They also freeze okay if you wrap them individually. Not quite as crispy when you reheat them from frozen, but still way better than trying to reheat a regular cheeseburger that’s been in the freezer.

    The Filling:

    • Ground beef
    • Bacon strips
    • Shredded cheese
    • Onion
    • Garlic powder
    • Salt and pepper
    • Worcestershire sauce

    How To Make Garlic Butter Bacon Cheeseburger Rollups Step By Step

    Cook the Filling:

    • Cook bacon in skillet until crispy, about 8 minutes
    • Remove bacon, keep 2 tablespoons grease in pan
    • Add diced onion to bacon grease
    • Cook onion until soft and see-through, 3-4 minutes
    • Add ground beef, break it up with wooden spoon
    • Season with salt, pepper, garlic powder while cooking
    • Cook until no pink remains, about 7 minutes
    • Drain excess grease if pool forms in pan
    • Crumble cooked bacon and stir into beef
    • Let cool 10 minutes so cheese won’t melt too fast

    • Melt butter in small pot over low heat
    • Add minced garlic, stir for 1 minute
    • Don’t let garlic brown or it gets bitter

    Assemble the Rollups:

    • Lay one tortilla flat on clean counter
    • Spoon ⅓ cup beef mixture down the center
    • Sprinkle generous handful of shredded cheese on top
    • Leave 2 inches empty on each end
    • Fold left and right sides over filling
    • Roll from bottom to top, pull tight as you go
    • Place seam-side down on parchment-lined baking sheet
    • Repeat until filling is gone

    Bake to Crispy Perfection:

    • Let rest 5 minutes before eating (cheese is molten lava)
    • Brush garlic butter over entire top and sides
    • Don’t skimp on butter, that’s where flavor lives
    • Bake at 375°F for 15-18 minutes
    • Edges should be golden brown and crispy
    • Cheese will bubble out the ends

    Top Tip

    • The biggest mistake with these garlic butter bacon cheeseburger rollups is not sealing them tight enough. If there’s any gap in your roll, all the cheese leaks out in the oven and you end up with an empty, crispy shell and your filling burned onto the baking sheet. After rolling each one, I press the seam down hard with my fingers for a few seconds to really seal it. Then I place it seam-side down on the baking sheet and press the whole thing flat with my palm not pancake flat, just firm enough that everything’s compressed together.
    • This makes the rollup hold its shape and keeps all that melted cheese trapped inside where it belongs. The first few times I made these, cheese would leak everywhere and the rollups would deflate into sad, flat things. Now I take an extra ten seconds per rollup to really seal and press them down, and they come out perfect every time.
    • The other thing that helps is not overfilling them. I know it’s tempting to pack as much beef and cheese as possible into each tortilla, but if you go overboard, they won’t seal no matter how hard you press. About one-third cup of filling and a big handful of cheese is the sweet spot. Any more than that and you’re asking for trouble. Less is more when it comes to actually getting them to stay closed in the oven.

    These rollups are filling on their own, but they need something on the side. French fries are the obvious choice Lina always wants fries. Tater tots work great too. Onion rings if you’re in the mood. Basically anything you’d serve with a regular burger works here. For lighter stuff, a simple green salad helps balance out all the cheese and beef. Coleslaw is good if you like that creamy, tangy thing. Pickles on the side are solid. Lina won’t touch vegetables but I try with carrot sticks and ranch anyway. Sometimes he eats one.

    For dipping, ketchup is what Lina uses for everything. Ranch dressing is good if you want creamy. BBQ sauce if you like sweet and smoky. I mix mayo, ketchup, and garlic powder together takes thirty seconds and tastes like burger sauce. Lina eats way more when there’s sauce to dip in. You can also do tomato soup for dipping, or throw mac and cheese on the side. Corn on the cob or baked beans work too if you’re going for cookout food.
