    • ¾ cup 150 g granulated sugar (Adds sweetness to the batter)
    • 2 teaspoons baking powder For rising
    • ½ teaspoon baking soda Helps with leavening
    • 2 Tablespoons cornstarch Makes the muffins light and fluffy
    • 1 Tablespoon poppy seeds For texture and flavor
    • ½ teaspoon salt Balances sweetness
    • ¾ cup 180 g sour cream (Adds moisture)
    • ½ cup 113 g unsalted butter, melted (For richness)
    • 1 large egg Acts as a binder
    • 2 Tablespoons lemon zest For a fresh citrus flavor
    • 2 Tablespoons lemon juice Adds tartness
    • 1 teaspoon vanilla extract Enhances flavor
    • ½ teaspoon lemon extract Optional, for more lemon flavor

    GLAZE

    • 1 ¼ cup 160 g powdered sugar (For the glaze consistency)
    • 1 ½ Tablespoons lemon juice For tartness
    • 1 ½ teaspoons water For glaze consistency, adjust as needed

    Method 

    1. Preheat your oven to 425°F (220°C) and line a 12-cavity muffin tin with paper liners.

    2. In a large mixing bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, cornstarch, poppy seeds, and salt.
