    Kambu Maavu Puttu is a lightly sweet dish made using millet flour which is steamed and then mixed with sugar, coconut and ghee. This recipe has a soft crumbly texture that melts easily in your mouth and gives a nice nutty taste of millet. I make this when I want something simple but still healthy, mostly for breakfast or sometimes for a light dinner.

    Kambu or Pearl Millet is one of the traditional millets that people have been using in South Indian homes for many years. It is rich in iron, fiber and helps in keeping the body cool during summer days. This is a good way to include millet in the daily diet, especially for those who are not used to it much. The taste is simple, mild and makes a nice change from regular breakfast items.

    Kambu Maavu Puttu is a simple millet based recipe that can be made in a few easy steps. The flour is lightly roasted and then steamed until soft, then mixed with ghee and sugar to yield a smooth and moist texture. The combination of cane sugar and cardamom gives a soft sweetness and mild aroma which makes it very comfortable to eat.

    This dish is quite popular in Tamil Nadu and some other South Indian places where people still use millet in regular cooking. The flavor of kambu is deep and slightly earthy, which is very different from the rice puttu that we usually make. It has a mild taste which goes well with ghee and coconut.     Kambu Maavu Puttu Ingredients

    • Kambu Maavu – I have used roasted kambu flour for this recipe, it gives nice nutty smell and deep flavor to the puttu. You can also use unroasted flour but it would be better to dry roast it a little before steaming so that the raw taste goes away.
    • Water – I added just enough to moisten the dough. This helps keep the mixture slightly firm before steaming. Add slowly and mix well until it feels firm when pressed in your hand.
    • cane sugar – I have used unrefined cane sugar, it gives mild sweetness and light golden color to the dish. You can also use jaggery if you want a more spicy and earthy taste.
    • Coconut – I have used freshly grated coconut, it adds moisture and gives a slight crunch in between. You can leave it out if you don’t like it, but I think it tastes good and smells fresh.
    • cardamom powder – I have added a little cardamom powder to balance the mild sweet smell and taste.
    • Ghee – I used homemade ghee, it makes the puttu soft and rich. It gives aroma, better taste and smell.

    1. Dry roast the flour till the aroma comes out, my flour has already been roasted so just fry it for a minute and proceed further. – Now sprinkle 2 spoons of water.

    2. Mix well without any lumps, try to hold the dough tightly with your hands if it holds then it is the right consistency, stop adding water.

    • roast– I usually dry roast the flour for just a minute to remove the raw smell of the flour. It also helps in making soft puttu after steaming.
    • adding water – Sprinkle water a little at a time, mix slowly and check the dough by pressing it in your hand. If it holds its shape, it’s great.
    • steaming time – I have steamed for about twenty minutes. When cooked, the color of the flour changes slightly, only then it is ready.
    • mixture -After steaming, I add sugar, ghee and coconut while it is still hot. This helps absorb flavor and become moist.
    • serving style – I sometimes shape the puttu using small cups or bowls, it looks neat and easy to serve. You can simply inflate and serve anyway.

    Serve this dish hot by pouring melted ghee on top. It also goes well with banana or a spoonful of curd. Store the leftovers in an airtight container in the refrigerator for a day. While serving again, heat it a little so that the ghee melts and the puttu becomes soft again.

    1.Can I use jaggery?

    Yes, you can, just melt the jaggery with a small amount of water and strain it once before adding it to the steamed flour. It gives dark color and rich taste to puttu.

    2.Is it good for children?

    Yes it is light and healthy. If you are making it for small children then you can mash it well and reduce the sugar a little.

    3.Can I skip coconut?

    You can leave out, but the coconut adds some moisture and a nice freshness, so I think it tastes better with it.

    4.How to know if the dough is cooked?

    After steaming, the flour will appear slightly darker and the smell of rawness will go away. If it feels sticky to touch, steam for a few more minutes.

    5.Can I make this in larger batches?

    Yes, you can make it in large quantities also. Simply steam in two rounds and mix gently after cooking so that it remains soft and fluffy.
