About Karupatti Pal
Karupatti Paal is a traditional drink made in many South Indian households. In this recipe, palm jaggery is used instead of sugar which gives natural sweetness and simple taste. The milk gradually takes on the flavor of palm jaggery and changes color slightly. Palm jaggery is rich in iron and regular consumption of it increases hemoglobin.
It is easy and simple to make palm jaggery milk but follow the steps and tips correctly otherwise the palm jaggery milk will curdle when heated. It feels good for the throat and also helps in digestion. This drink is often given during cold times. This gives a feeling of warmth inside. You can eat it even on normal days.
The drink is smooth and light, so it is easy to drink. Dried ginger powder adds mild heat and nice flavor that balances the sweetness. I usually make it fresh and serve it immediately. It feels like a small relaxing drink after a long tiring day. I don’t like to keep it fresh, it tastes better, and reheating this drink is also not recommended.
Palm jaggery is a better alternative to white sugar as it is less processed. It helps in giving instant energy and is easy to digest. When mixed with milk it becomes a simple and healthy drink. Even after drinking it does not feel heavy and feels like a small comfortable drink. I generally prefer it to sugared milk.

Expert Tips
- mixing jaggery – I always turn off the flame, take it off the flame and then add the palm jaggery. Try not to put it in boiling milk as the milk may curdle.
- Tension – I usually strain the milk after adding jaggery, as sometimes there may be small impurities or residues in it. This gives a smooth drink.
- quantity of dry ginger – I add only β teaspoon or a small pinch of dried ginger powder. If you add more, it will be too strong and overpowering.
- served – I always serve it hot, it tastes good even when hot.
- sweetness test – Before serving, I taste the jaggery once and adjust the jaggery if needed, because the sweetness can change every time.
serving and storage
As soon as it is ready, serve it hot in a cup or small mug. It tastes good as a morning drink or as a relaxing evening drink after a long day. Do not store leftovers as milk may spoil and taste may also change. It is best to make it fresh and consume it immediately.
