    Kati Roll is a popular Indian street food made by filling inside Indian flat breads like roti, paratha etc. The filling can be mixed vegetables, egg or chicken or paneer or even mushroom etc. Kati Roll is a street food dish that originated in Kolkata, West Bengal. Learn how to make Kati Roll at home with step by step pictures.

    Rolls or wraps or frankies I love these. They’re perfect for on-the-go breakfast or snacks for kids. I always make chopped rolls along with chapatti, use leftover vegetables or make a filling of paneer, mushroom and kids love it.

    About Kati Roll

    Kati Roll is an Indian street food originating from Kolka, West Bengal. The word ‘kaati’ translates to stick in Bengali, which refers to the method of making this dish with kebabs roasted on a stick or skewer.

    The outer cover can be made thick like paratha or thin like chapati. It depends on how you like it. The classic Kati roll uses thick paratha with ample amount of filling, even if you have just one, your stomach will be satiated.

    Kati Roll Ingredients

    • Flour – You can use maida or wheat flour. Traditionally all purpose flour is used to make kati rolls, for a healthier option I have used more wheat flour and less all purpose flour.
    • Mixed Vegetables – Onions, capsicum and carrots are added. You can add corn, cheese, mushroom etc. in it.
    • Ginger Garlic Paste – Adding ginger garlic paste enhances the taste of the stuffing.
    • tomato sauce – Adding tomato sauce or ketchup makes its taste spicy.
    • Masala Powder – Turmeric, red chili powder and garam masala powder are added.
    • Lemon juice – Adding lemon juice gives it a spicy taste.

    Kati Roll Filling

    The filling variations are endless, you can use leftover vegetable curry or paneer bhurji or just fry the vegetables. You can also add oven roasted vegetables with green chutney which makes a perfect filling. You can also add sprouts or pulses or legumes as filling for healthy variety.

    How to make Kati Roll step by step

    To make paratha/roti

    1. Mix salt, wheat flour and all purpose flour. Gradually add milk and water to make a soft dough.
    2. Cover and let it sit till the stuffing is ready.

    to make the stuffing

    1. Heat oil, splutter cumin seeds, add onion and fry until transparent. Add ginger garlic paste and fry for a minute, then add vegetables, fry for a few minutes or until cooked. Make sure the vegetables are cooked but still crisp.
    2. Add turmeric, red chilli powder and garam masala powder and mix well. Finally add tomato sauce, lemon juice and green coriander and turn it off.

    To make it as a cover

    1. Break lemon sized balls from the dough and flatten them like we do for chapatti. Sprinkle flour if necessary.
    2. Then heat a dosa pan, when it becomes hot, add prepared parathas in it and cook from both the sides. Similarly, make all the parathas and keep them aside.
    3. While serving the prepared paratha, add some oil and toast it. Then spread ½ tbsp green chutney, add one tbsp stuffing (paneer bhurji/sabzi stuffing).
    4. Then gently seal it from the bottom, then make a roll by closing it tightly on both the sides (left and right) as shown in the picture (rolling like this prevents the stuff from falling out)
    5. Then wrap the bottom part of the paratha with butter paper/silver foil and enjoy your kati roll.

    I love Paneer Bhurji in wraps and rolls. So I reserved a little for this and made this roll. You can place the stuffing in the middle and close it from both the sides and serve by pricking a toothpick in the middle but by wrapping with the above method the filling does not come out and it is also easy to hold. The recipe of Paneer Bhurji is also the same, just the filling is different and you can get the Paneer Bhurji recipe here.

    These are mildly spicy which makes them perfect for kids. You can also serve with home made white butter.

    • stuffing – The stuffing ideas are endless, you can even make chicken vegetable stuffing. You can make Paneer Tikka Kati Roll.
    • store ahead – You can prepare the stuffing and parathas the night before and simply assemble the wraps, there you can have your delicious filled wraps for breakfast. This is a perfect evening snack for children.
    • served – Serve with tomato sauce or can eat it as is. The thickness of each paratha may be slightly more.

    service and storage

    Serve chopped rolls with green chutney or mayonnaise. Kati rolls taste great on their own too. Knead the chapatti dough, prepare the filling and keep it aside. Whenever you feel like making parathas and stuff, serve them hot.
