Vegetable Paratha is my all-time favorite – I make it both ways either pressure cooking the vegetables and mixing them with the flour and then roasting the vegetables and cooking them as stuffing.

About Mix Vegetable Parantha
Mix Veg Paratha is an Indian flat bread made using wheat flour, mixed vegetables and spice powders. The vegetables are cooked, mashed and mixed into the dough making the parathas soft and tasty.
For this mixed paratha, you do not need any side dish, just the raita is enough to end the dinner or meal. Also it is nutritious and healthy with all the vegetables.
I am sure that children who are hesitant in eating vegetables will like this parantha with pickle and raita. So this is a way to take away vegetables from kids who don’t eat them. You can also make this stuffed veg paratha.

Mix Veg Paratha Ingredients
- wheat flour – Wheat flour or chapatti flour is used to make paratha dough.
- Mixed Vegetables – I have used carrots, beans, cabbage and kale. You can also add potatoes, peas etc. in it.
- spice powder – Turmeric powder, chili powder, cumin powder, garam masala powder are mixed in the flour.
- coriander leaves – Coriander leaves add great flavor so don’t miss it.
- Oil – Oil is required to fry the paratha. You can also use ghee for toasting.
How to make Mixed Veg Paratha step by step
1. Using a chopper or food processor, chop the vegetables as finely as possible and cook with salt, turmeric powder and a little water on a medium flame for 2 whistles. Mash the vegetables well so that it becomes easy while rolling. Keep vegetable stock reserved.


2. Add vegetables mashed with wheat flour, then add red chili powder, cumin powder, garam masala powder, chopped capsicum, coriander leaves and salt as required. Add vegetable stock and water if necessary to make a soft elastic dough. Let it rest for at least 30 minutes. Make lemon sized balls, flatten slightly.


3. Sprinkle flour on the surface of the rolling pin and roll out thin/thick parathas. – Heat oil on the pan and cook the paratha from both the sides.


Serve with hot curd and pickle.


Expert Tips
- You can alternatively roast and cook the vegetables and make it as stuffing.
- Make sure your roasted vegetables add up to at least 1 cup for 2 cups of flour.
- The vegetables are completely of your choice, you can also use green peas, paneer etc.
- Be very careful while adding water as the vegetables will release water.
serving and storage
Mix Veg Parantha is great to serve with curd and pickle. – You can keep the leftover dough in the refrigerator for 2 days. Prepare the parathas when you want to serve them and always serve them hot for best taste.

- one and a half small spoon cumin powder
- ΒΌ small spoon garam masala powder optional
