Pananakarakandu Paal is a simple and soothing milk drink made by boiling milk with palm candy and mild spices. It is usually prepared to cure cold or cough. The drink is hot, slightly sweet and mildly spicy. It hardly takes 10 minutes to make but gives a very relaxing experience.

The taste is mild and natural as palm candy has its own unique sweetness. Black pepper gives mild warmth to the throat and cardamom gives mild aroma. It is different from regular sugared milk as it has a more earthy and deeper flavor. You can make this mostly at night during rainy days or when the weather is changing.

    About Panangkarkandu Pal

Panankarakandu Paal is a traditional home remedy drink in many South Indian households. Palm sugar candy, also known as Pananakarakandu, is known for its medicinal properties. It is often used in place of white sugar as it is considered more natural. When boiled with milk it dissolves slowly and gives a nice light brown color.

The texture of this milk is smooth and slightly rich and, as it is boiled for a few minutes, the flavors blend together well. Black pepper powder adds just a little heat which helps soothe throat irritation. Cardamom adds flavour, aroma and balances the spices in this recipe.

If you want, you can also add a pinch of turmeric. Some people increase the intake of black pepper for greater effect during a cold. But I like to keep it simple so that the flavor of the palm candy comes out well. Too many ingredients can hide its original taste. This provides instant relief and you feel relaxed.

I usually prepare it fresh and serve it immediately while it is hot. Even children drink it without any complaint as its sweetness is mild. Panangarakandu paal is healthy and is a home remedy for cough and cold.

    • Milk – I used for creamy base. It gives richness and smooth texture, if you wish you can use full fat milk for more richness.
    • Palm Mishri/Panagarkandu – I have added for natural sweetness and medicinal value, you can also use in powder form as it dissolves more easily.
    • freshly ground black pepper – I used a little black pepper powder for throat warmth and comfort. You can add more if you want a slightly stronger pepper flavor.
    • cardamom powder – I have added a small amount for mild aroma and taste. It balances the spices and gives nice flavor to the milk.

    Expert Tips

    • boil – I usually keep the flame low so that the milk does not boil too much. Cooking on low flame helps the palm candy dissolve properly.
    • Crush Palm Candy – If the pieces are large I crush them a little before adding. It may take some time for it to dissolve completely.
    • adjust pepper – I add black pepper little by little. Too much of it can make it too spicy for children.
    • always serve hot – This drink tastes best when served hot. The taste may reduce slightly when cooled.
    • do not boil too much Cook on low flame for just a few minutes. Excessive boiling can change the taste of milk.

    serving and storage

Immediately after straining, serve Panangarakandu Paal hot in glasses or cups. It works well before sleeping especially during cough or cold. It is better to be consumed fresh and should not be stored for a long time. You can reheat it a little if necessary but fresh tastes always better.
