Panankarakandu Paal is a traditional home remedy drink in many South Indian households. Palm sugar candy, also known as Pananakarakandu, is known for its medicinal properties. It is often used in place of white sugar as it is considered more natural. When boiled with milk it dissolves slowly and gives a nice light brown color.
The texture of this milk is smooth and slightly rich and, as it is boiled for a few minutes, the flavors blend together well. Black pepper powder adds just a little heat which helps soothe throat irritation. Cardamom adds flavour, aroma and balances the spices in this recipe.
If you want, you can also add a pinch of turmeric. Some people increase the intake of black pepper for greater effect during a cold. But I like to keep it simple so that the flavor of the palm candy comes out well. Too many ingredients can hide its original taste. This provides instant relief and you feel relaxed.
I usually prepare it fresh and serve it immediately while it is hot. Even children drink it without any complaint as its sweetness is mild. Panangarakandu paal is healthy and is a home remedy for cough and cold.

- Milk – I used for creamy base. It gives richness and smooth texture, if you wish you can use full fat milk for more richness.
- Palm Mishri/Panagarkandu – I have added for natural sweetness and medicinal value, you can also use in powder form as it dissolves more easily.
- freshly ground black pepper – I used a little black pepper powder for throat warmth and comfort. You can add more if you want a slightly stronger pepper flavor.
- cardamom powder – I have added a small amount for mild aroma and taste. It balances the spices and gives nice flavor to the milk.

How to make Panakarakandu Paal step by step
1. Take milk in a saucepan and boil for 3-5 minutes.

2. Add palm sugar in it, then add cardamom powder and black pepper powder.

3. Cook on low flame for 5 minutes.

4. Switch off, drain and serve hot

Serve immediately.
