    Pori Kadalai is a light and crispy sweet and salty mixture made using puffed rice, peanuts, chutney dal and a little jaggery. It’s very quick to make and requires only a few simple ingredients from the kitchen shelf. The combination of crunchy pori with the nutty flavor of kadalai and the mild sweetness of jaggery makes it such a great snack to have at any time.

    About Pori Kadalai

    Pori Kadalai is made by mixing puffed rice, roasted peanuts and chutney dal with a small amount of jaggery powder. This is an easy snack mix that can be made instantly at home. Its taste is mildly sweet and salty at the same time which makes it very satisfying. The puffed rice gives a light airy crunch and the peanuts give off a nice aroma of roasting.

    If you want, you can also add small cardamom powder or small coconut pieces to it, but plain coconut also tastes great. There is no cooking or sugar syrup here, just mix everything in a bowl. It is light on the stomach and easy to digest. I like how the jaggery adds an earthy sweetness without being too heavy.

    The best part is that it can be made in just a few minutes and there is no need for oil or frying. Even when you feel like eating something crunchy at night, this can be made in a jiffy.     • Use fresh crispy porridge – I have used freshly purchased Porri. If you find it soft, dry roast it for a few minutes to make it crisp again.
    • Roast the peanuts slowly – I usually roast peanuts on low flame so that they do not burn. This gives off a nice aroma and improves the taste of the mixture.
    • grind jaggery finely – I have made the jaggery powder very fine so it gets mixed evenly. If you add big pieces then it will not spread properly.
    • mix when hot – I like to mix the jaggery and peanuts when it is still slightly warm so that the jaggery sticks lightly and gets incorporated well.
    • serve immediately – I usually serve it immediately after mixing. If you keep for a longer time, the porri starts becoming soft and loses its crispness.
