Homemade pulao masala powder is very aromatic and tasty. When I was making Aloo Bhindi Pulao I wanted to make and post Pulao Masala Powder from the beginning and finally it happened. It is a readymade mix that can be used for many dishes including pulao, paratha stuffing, stir fries, fries etc. Try it, make a batch and store it.

About Pulao Masala Powder
Pulao Masala Powder is an aromatic Indian spice blend used to enhance the flavor of pulao, biryani, fries, curries, gravies, etc. It adds heat, aroma and mild spice without overpowering the dish. The ingredients and measures used vary according to our personal preferences.
It’s kind of an addiction for me when it comes to making spice blends at home. Yes, I avoid buying it from stores thinking about additives, preservatives. Also the aroma and taste are not as good as compared to homemade. This Pulao Masala Powder recipe is very simple and easy to make.
I have not tasted any store bought pulao masala powder, so I have no idea about its recipe and ingredients used. I found a pack of MTR Pulao Masala Powder in Amazon while I was browsing, looked at the ingredients and then tried this masala mix. And it turned out so good that I made another batch to shoot and post here.
After trying many types of spice powders I now have an idea of the measurements. I must say it turned out pretty good. Not only for pulao, you can also use it for curry, gravy, masala etc.

How to make Pulao Masala Powder step by step
1. First add the spices listed under ‘For Pulao Masala’ in a pan.

2. Fry for 3-5 minutes or until a nice aroma appears. No need to wait for the color to change.

3. Take out in a plate and keep aside to cool.

4.Put it in a grinder and grind it finely.

When it cools down, keep it in a clean dry container.

- roast – Dry roast the spices until a nice aroma comes out. Make sure to fry on low flame only.
- grinding – Use a dry mixer jar for grinding. Always grind in small batches to retain flavor and aroma.
- maintenance – Always use a clean dry spoon to keep it fresh and dry.
- storage – Cool completely before storing. You can store it at room temperature for at least 3-4 months.
- replacement – If you want, you can leave out red chilli and add chilli powder while making pulao. I had added very little chilli while making the spice mixture.

Use it for curries, pulao, gravies and enjoy the best taste. Pulao masala powder remains good for about 3-4 months at room temperature. If you want to store more than that, refrigerate it and it will be good for up to a year.

1.What is the difference between biryani masala powder and pulao masala powder?
Biryani masala powder is stronger with more masala flavor while pulao masala powder is milder. Although most of the ingredients are the same the taste and flavor are definitely different. This garam masala is less spicy than biryani masala and gives a subtle but rich flavor to the rice.
2. How can we use Pulao Masala?
You can add pulao masala to make curries, gravies, stir fries, salads or rice dishes like pulao etc.
3. When should I add Pulao Masala while cooking?

- 1 tablespoon Cumin
- 1 small spoon pepper corns
- Two 1 inch cinnamon
- 10 open school clove
- 10 open school Cardamom
- 1 open school taranaise
- 1 No mace
- 1 small piece nutmeg
- 4 open school red chilli
- 2 open school bay leaf
