These roasted potatoes are perfect for everyday meals because they are simple and easy to prepare. With little effort, these are so delicious that you can’t stop from just one. It has a lovely crispness on the outside and soft fluffy inside that is bursting with garlic and rosemary flavours.
I love how these turn out so delicious with just a few ingredients. I have shared some tips and tricks and they work perfectly. This can be one of the simple vegetarian side dishes or a main to add to your Thanksgiving table.
To enhance the taste, whole garlic is added and a sprig of rosemary is added. These potatoes take about 1 hour to prepare, so we have to avoid burning the spices, so add it as per your convenience.

Roasted Potatoes Ingredients
- baby potatoes – Choose small potatoes, wash it at least 3-4 times to get rid of mud or dirt. Wash and dry it thoroughly before using.
- Garlic – I have added whole garlic cloves without peel, you can also add it with peel.
- rosemary – Adding rosemary while roasting gives great taste but add with sprigs so that they do not burn.
- parsley, chilli pieces After roasting potatoes, they are added as spices.
- olive oil – Potatoes are tossed in olive oil before cooking.
- black pepper – It is best to use crushed black pepper.

How to make roasted potatoes step by step
1.Wash half kilo small potatoes thoroughly, dry them and cut them in half. If the potatoes are big then cut them into 3 slices.

2.Put chopped small potatoes in a bowl, add 2 tablespoons olive oil, 1 teaspoon crushed black pepper and salt to taste.

3. Mix it well and keep aside. Preheat the oven at 200 degrees Celsius for 10 minutes.

4. Line a baking tray with foil or parchment paper. Take out the potatoes in a tray.

5. Turn all the potatoes and cut them downwards.

6. Add 2 small sprigs of rosemary along with 6 cloves of garlic.

7.First bake in preheated oven at 200 degrees Celsius for 45 minutes. Then turn over and bake for remaining 10-15 minutes. So overall it takes around 50-55 minutes.

8. Cooked and ready. Prick with a fork to check, otherwise it will be baked or cook for a few more minutes.

Actually it is not needed. But gentle boiling speeds up cooking. So you can boil the potatoes for 5 minutes and then roast them in the oven for about 30 minutes or until crisp and golden.
