Raita is an Indian side dish usually made with thick curd Paranthas / biryani / Casserole / mixed rice varieties. My biryani meal is incomplete without raita so I made this mixed veg raita with veg biryani and it was a great combination. Do try this Veg Raita and enjoy with your meal.

About Vegetable Raita
Vegetable raita is made by mixing finely chopped vegetables with curd, spice powder and coriander leaves. Vegetable Raita or Veg Raita is a great combo with biryani, pulao, roti, paratha etc. It can be eaten just like that and its taste is also amazing.
Vegetable Raita has a soft, silky curd base mixed with crunchy vegetables like cucumber, carrot, onion, tomato, capsicum along with flavourful spice powders, while fresh coriander leaves enhance the flavor of the raita.
Veg Raita is a healthy side dish that can be made very quickly. Just chop the vegetables, mix them with curd and tada, your vegetable raita will be ready in minutes. There are no specific measurements for the vegetables used, just add as per your choice and your colorful mixed vegetable raita is ready.
You can also serve it with lunch. This can be one of the best raita served with heavy meals as it is light and cool. This raita is also healthy as it has all fresh raw vegetables with mild spices and curd.

- Curd – Use thick curd for best results. Always whisk it well before mixing for a smooth and creamy texture.
- vegetables – I have used carrot, onion, tomato, cucumber and capsicum.
- spice powder Roasted cumin powder, black salt, black pepper powder and chaat masala powder are used.
- coriander leaves – Coriander leaves are used for flavoring and garnishing, it adds freshness and flavour.

How to make Vegetable Raita step by step
1.Put 1 cup thick curd in a mixing bowl.

2. Beat it well to make it smooth and creamy.

3. Add ¼ cup onion, 1 tbsp tomato, 2 tbsp capsicum, 2 tbsp carrot, 2 tbsp cucumber, salt to taste, ⅛ tsp black salt, ½ tsp roasted cumin powder, ¼ tsp chaat masala powder and ¼ tsp black pepper powder.

4. Add 1 tablespoon green coriander.

5. Mix it well. Adjust the consistency if it is too thick.

- vegetables – You can also add vegetables like cabbage, boiled potatoes etc. or any of your favorite vegetables which are suitable to eat raw. Make sure to chop the vegetables finely.
- Curd -Use thick curd. You can make this salad with less raita and give it to your children, it is colorful and so tasty that they will not be able to refuse to eat it.
- spice powder – If you like the taste then you can add a pinch of dry mango powder to it.
- Adjustment – There is no exact measurement for this raita, you can plus/minus as per your choice.
- Stability – The consistency of raita should be thick and creamy. You can adjust the consistency very well by adding milk or water.

Vegetable Raita can be served with rice, roti, paratha, pulao, biryani etc. This raita remains good for 1 day in the refrigerator. I would recommend serving it fresh as it contains raw vegetables.
