Aloo Gobi is a dry curry that is perfect as a side dish for rotis! I have made it dry to eat with rice and dal along with roti. You can also make gravy as per your choice. Aloo Gobi is an easy side dish that goes well with roti and rice, do try it.

About Aloo Gobi
Aloo in Hindi means potato and gobi means cauliflower, so Aloo Gobi is a combination of these vegetables with herbs and spices. This Aloo Gobi Masala is a perfect combination of vegetables with flavour.
Aloo Gobi is a popular dry curry and a staple dish in North Indian households. It goes great with rice, pulao and roti. I love North Indian cuisine and this is also one of my favourites.
This is the easiest side dish you can make when you have both the vegetables on hand. Both the vegetables are my favorites hence this recipe makes regular appearance in our regular menu.

Potato Cabbage Ingredients
- Cauliflower – Choose fresh white cauliflower.
- Potato – Choose small potatoes.
- tempering – Tadka is made from oil and cumin seeds.
- Onion, Tomato – Onions are added for crispiness and flavour, tomatoes are added to make it a curry.
- Ginger Garlic Paste – Ginger garlic paste is added for taste.
- spice powder – Turmeric powder, red chili powder and garam masala powder are mixed.
- coriander leaves – Garnish with coriander leaves on top.
How to make Aloo Gobi step by step
1.Pressure cook for 3 whistles until the potatoes become soft. Peel the skin, cut them into cubes and keep aside. Cook the cauliflower florets in water with salt and turmeric powder until they become soft and firm enough to bite. – Heat oil in a pan, add cumin seeds and let it splutter. Add ginger garlic paste and onion and fry until it turns light brown.

2. Then add tomatoes and cook until raw. Now add turmeric powder, red chilli, garam masala powder and salt as required. Fry for a few minutes until the raw smell of tomatoes goes away.

3. Add cauliflower and potatoes and mix well. Cook until the vegetables absorb the spices, this may take 2-3 minutes. Adjust the salt at this level. Garnish with coriander leaves and close.

Serve with hot roti or rice. It also goes well with any variety of rice.

Expert Tips
- Make sure both the cabbage and potatoes are firm enough to cut at the same time, they should not be mushy.
- You can use tomato puree and make it like gravy.
- It is suitable with naan, roti or even any type of rice.

Aloo gobi can be served with rice, roti etc. This vegetable keeps well in the refrigerator for 2 days, reheat and serve.

- 1 small size Cauliflower
- 1 small spoon ginger garlic paste
- 1 medium sized Onion finely chopped
- 1 medium sized Tomato finely chopped

- half and half small spoon garam masala powder optional
- 2 small spoon coriander leaves
