I have grown up watching Amma make this for me and have even helped her many times. But I never thought that years later I would be able to create it from scratch. This is one of those recipes that I love to make and eat.

Poli is a traditional sweet made for special occasions and festivals. It is called Holige or Obattu in Kannada and is popular in Karnataka. They are very soft when warm or hot. Make sure you try these only when you have time.
The first thing that kept me away from trying it was the rolling part. But now that I’ve tried my hand at many stuffed things Paranthas This was easy as I found that it was much easier to make the stuffing with maida than wheat flour.
I like both thin and thick. I really like the police served in IRCTC during day trips and will look forward to it. Since the rolling part requires patience and time to get the perfect polish without taking out the stuffing.

- Flour – Flour is used here. To prepare flour, water is mixed with flour.
- Chickpea lentil – Chana dal or Bengal gram forms the base of the inner sweet stuffing.
- Coconut – Grated coconut is added to the sweet stuffing for flavor and taste.
- Jaggery – Jaggery is used for sweetening.
- Oil – Any cooking oil that is flavorless can be used.
- Salt – Salt is added to the batter for taste.
- Ghee – Ghee adds spiciness and flavor to the stuffing, and also helps in reducing sticking.
How to draw Polly step by step
1.First of all, to make the outer cover: Take flour in a bowl, add oil and salt, mix well, then add water little by little.

2. Knead a soft and flexible dough like chapatti dough. Let it rest for an hour. Meanwhile let’s start making the puranam (inner stuffing).

3.For the inner stuffing: Dry roast the chana dal until a light aroma emerges, do not let it turn brown. Then soak it in water for at least 1 hour.

4.Then cook the chana dal with water till it becomes soft but do not let it get soft (it should retain its shape even when pressed). Drain the water from chana dal and keep it aside.

5. Dry roast the coconut until all the moisture evaporates. Grind the chana dal coarsely with the jaggery – use the dal option in your mixer, just pulse it a few times.

6. Add roasted coconut and cardamom powder to the mixture of ground gram dal and jaggery. – Make small lemon sized balls and keep them ready.

7.Now break balls of equal size (slightly larger than the balls of chana dal) and flatten them a little. Then place a sweet ball in the middle.

8. Just like we make stuffed parathas, pull the edges towards the middle and seal it completely. Then flatten it slightly. Sprinkle flour if necessary.

9.Roll it into thick or thin poli. Heat the pan, carefully place the poli on the pan, sprinkle oil and cook the poli until brown spots appear on both the sides. Serve hot with a spoon of butter or ghee.

Serve poli hot with ghee!

Expert Tips
- It keeps well for up to a day at room temperature. If kept in the refrigerator it can last well for 2 days.
- While grinding, take care that the chana dal does not become like a paste. It should be coarse and one or two pulses should come out.
- Rolling thick or thin is completely your choice.
- Serve hot with butter – tastes amazing!
- You can also add a pinch of turmeric powder like store bought turmeric powder, but I don’t like to do so.
- You can also add milk while kneading the flour but its shelf life will be less.
serving and storage
Poli is best served hot with ghee or butter. This curry keeps well in the refrigerator for 2 days, reheat and serve.
