    Carrot Yogurt Popsicles are a creamy refreshing dessert that is perfect for the hot summer days. It is made using soft cooked carrots, mixed with thick yogurt to create a smooth and slightly sweet frozen treat. The flavor of this popsicle is mild and not too sweet, so it feels light and healthy when you eat it.

    This recipe is quite unique from the usual popsicles as it combines the natural sweetness of carrots along with the tangy flavor of curd. It is soothing and cooling which helps to beat the heat. It is fun to apply layers of curd and carrot alternately and the colors also look very attractive.

    This dessert is easy to make and has only a few simple ingredients. It is usually made in summers or hot afternoons when something light and cool is required. This recipe doesn’t require any special equipment, you can even use small cups as popsicle molds.

    The texture is creamy and smooth and there are chunks of carrot puree in each bite. It has mild sweetness and slightly spicy taste like curd. To make it beautiful and fun for kids, you can simply make layers of curd and carrot puree. This recipe is versatile and you can even use almond milk or coconut milk instead of dairy if you want a vegan version.

    I usually make it on weekends when I have time and feel like eating something light but special. My children have loved it and even friends have praised it as a healthy dessert when they visit.

    • thick curd – I used it for the creamy base, it gives a smooth texture to the popsicles. You can also use plain yogurt or Greek yogurt.
    • Milk – I used to mix milk in curd, it makes the popsicle softer. If you like thicker milk then you can skip the milk or use almond milk for a lighter version.
    • Carrot – I peeled them and cooked them until soft. These provide natural sweetness and colour.
    • Honey – I have added it just for mild sweetness. You can also use maple syrup or any sweetener of your choice.
    • vanilla essence – I used it for aroma and flavor, it makes it taste a little fancy. If not available you can skip.

    1. Take curd, beat it well. I used my hand blender. Add honey.

    2. Then add milk and vanilla essence and beat it. Peel the peel of the carrot, cut off the ends, then pressure cook it for 2-3 whistles or until it becomes soft.

    3.Pure it and keep aside. Take your favorite popsicle mold.

    4.First add the curd mixture, then add 2 spoons of carrot mixture, keep mixing alternately.

    5.Fill it until you reach the rim. Cover with aluminum foil and freeze for 2 hours, then add the ice cream sticks. You can alternatively close with a popsicle lid. Freeze overnight or for at least 6-8 hours. Remove the foil, place the bottoms under running tap water and then carefully remove the popsicles. Serve immediately!

    • removing popsicles – Before removing I hold the bottom of the mold under water for a few seconds. This helps the popsicle to come out easily.
