    • buttermilk – Buttermilk is used to soak the corn and give it a mild spicy taste. This also helps in softening the mixture.
    • soda – Added soda to make the idli soft and slightly fluffy. Add just a little.
    • Oil – Oil for tempering and greasing the mold. This prevents the idli from sticking.
    • mustard seeds Mustard seeds are added to give it tempering and mild taste. It adds a little crunch.
    • Cumin – Cumin is added to idli for aroma and taste. It mixes well with the batter.
    • urad dal – Urad dal is added for tempering which gives light crispness. It also adds texture.
