How to Make Linzer Cookies Step by Step
1. Soak almonds in hot water for 30 minutes, peel them. Fry them for a few minutes until brown spots start appearing here and there. Keep aside to cool.

2. Grind the roasted almonds with sugar (as fine as possible) into a powder and keep aside. In a mixing bowl – add butter.

3.Whisk it, then add vanilla essence. I used my hand mixer.

4.Add almond sugar mixture, beat again and then add flour

5. Beat it, stop beating when the dough starts coming together. Use a spatula to bring together. – Now use your fingers to knead the dough, do not knead it.

6. Wrap in cling film and refrigerate the dough for at least 30 minutes. Preheat the oven at 180 degrees Celsius for 10 minutes. First of all get ready with cookie cutters, you need small and big cutters like this. I bought the grooved ones and the smaller ones online.

7.I have used only half the flour now and stored the rest for later use. – Now spread butter paper or parchment paper, place the dough on it and again place another butter paper and roll the dough to ¼ inch thickness. Take your cookie cutter, dip it in the dough.

8.Cut like this, first cut with a big cutter, then cut in the middle with a small cutter.

9. Gather the remaining pieces and roll again, repeating until all the dough is used up. Arrange it in a baking tray.

10.Bake in preheated oven at 180 degrees Celsius for 10-12 minutes or until the edges turn golden brown. Don’t be tempted to overbake, the cookies will become tough. Now take the jam and keep it in boiling water for a few minutes so that the jam becomes sticky and spreadable.

11. Get ready with icing sugar also. First of all, separate the cookies with holes and those without holes and keep them aside. – First of all, keep the cookies without holes upside down in a plate. Spread jam on it.

12.Now take cookies with holes, sprinkle icing sugar over them.

13.Now take the hole cookies and sandwich it with jam on the cookies. Now your cookies are ready.

Cool completely on a wire rack and then store.
