Whenever I see broccoli that is nice, fresh and green, I buy it. i usually make Broccoli Stir Fry Or Oven Roasted Broccoli. Last time I reserved some flowers to try this paratha and it turned out very well. I wanted to make it simple without onion and garlic and here is the recipe for Broccoli Paratha.

About Broccoli Paratha
Broccoli Paratha is a stuffed paratha variety made using broccoli, herbs and spices. It is delicious, healthy and filling for breakfast or dinner. Even children and elderly people who do not like broccoli will definitely like to eat it.
Mittu does not like broccoli but he likes to eat it in the form of parathas or in soup. You don’t even need a side dish, just mix it with curd or pickle, your breakfast is ready. Just like we chop broccoli finely, it is easy to roll it as well.

Broccoli Paratha Ingredients
- wheat flour – Wheat flour or chapatti flour is used to make paratha dough.
- Broccoli – Choose fresh green broccoli.
- Masala Powder – Red chilli powder, coriander powder and garam masala powder are used.
- celery seeds – Celery seeds are cracked for tempering.

How to make Broccoli Paratha step by step
1. Add wheat flour, salt and required water in a wide bowl, mix well and knead it into a soft dough like chapatti dough. (The quantity shown in the picture below may vary from actual as I have used my Rajma Paratha step by step picture for this). Let the dough rest until we prepare our stuffing.

2. Separate the broccoli florets and soak in hot water + a little salt for 10 minutes. Then drain the water and finely chop/grate them (I used my vegetable chopper to do this), keep aside. – Heat oil in a pan and add celery seeds in it, let it crackle.

3. Then add grated broccoli and fry for 3 minutes, then add spice powder along with salt and fry until the raw smell comes out. Sprinkle some water and cover with a lid and cook until it becomes soft and its color turns light green. Now the stuffing is ready, take out the stuffing in a bowl and keep it aside.

4. Apply flour on the surface and roll the chapatti dough a little thick. Then put the stuffing in the center and gather the dough from all sides as shown below. seal it tightly

5. Flip to the other side. Now flatten it again a little with your palms and then start rolling slowly. Roll it without the filling coming out. Sprinkle flour so that it does not stick. Heat the dosa tawa, flip the parantha, sprinkle some oil and cook till brown spots appear on both the sides.

Serve hot with any pickle of your choice or with curd!

Expert Tips
- While rolling for the first time, do not apply too much pressure in the middle because the filling has to be placed in the middle and rolled again, so make sure that the middle part is a little thick.
- Roll out the paratha gently and sprinkle flour as required.
- Roll your paratha as thick or thin as you like.
- I used my chopper to finely chop the broccoli. You can use a grater/mixer with pulse option. Do not grind it smooth.
serving and storage
Broccoli Paratha is great to serve with curd and pickle. You can keep the dough and stuffing in the refrigerator for 2 days. Make parathas when you want to serve them.
