About Carrot Kheer
Carrot Kheer is a creamy dessert that you can make during festivals or any special occasion. Kheer is Payasam, hence the Payasam made by adding carrots as the main ingredient is called Carrot Kheer. Carrot Payasam, as it is popular in South India, is a unique kheer recipe that you can make from our normal rice kheer.
This carrot kheer can be made in a number of ways – some versions include frying the carrots in ghee and boiling them in milk. But this recipe I have shared is much easier and will definitely be a kids favourite. As the carrots are cooked and mashed, the kheer becomes smooth and creamy.
Cardamom powder, saffron goes well with carrots and milk so don’t skip it. If your kids don’t like carrots as a vegetable, try this recipe for them and I am sure they will love it and ask for more. Mitthu has loved this kheer since childhood, now Gugu has also included it in his favorite kheer.
It is a creamy and rich dessert that you can make as a part of a meal or as an after meal dessert. If you get Delhi red carrot then you can use that also. Carrots are a rich source of Vitamin A which is great for our eyes so try to include carrots in your diet regularly.

Carrot Kheer Ingredients
- Carrot – Choose fresh carrots. I have used Ooty carrots, you can also use Delhi red carrots. Use fresh carrots.
- Milk – Use full fat milk. I used farm fresh milk.
- Ghee – used for roasting carrots before cooking.
- Sugar – I have used regular white sugar but you can also use jaggery. You can also take condensed milk instead of sugar.
- flavoring -Cardamom powder and saffron are the best taste for this kheer.
- Garnish – I have used pistachios, you can also add dry nuts by frying them in ghee.

How to make carrot kheer step by step
1. Take 4 medium sized carrots. Trim both ends, remove skin and wash thoroughly.


2. Cut it roughly and keep it ready.


3. Heat 1 tablespoon ghee in a pressure cooker, add chopped carrots and fry for 3 minutes.


4. Add about 8 whole cashews, ½ cup milk and ½ water. Pressure cook till 3 whistles.


5. Check whether the carrots are cooked or not.


6. Cool it and grind it lightly.


7. Boil 3 and ½ cups milk in a saucepan, cook on low flame for a few minutes.


8. Add cooked carrot puree.


8. Add ¾ cup sugar.


9.Add about 10 threads of saffron.


10.Mix it well and let it boil for 15 minutes.


11.Then add ¼ teaspoon cardamom powder and chopped pistachios. I added a little here and reserved the rest while serving.


12.Mix it well and turn it off.

Expert Tips
- Carrot – Choose fresh carrots. Cut off the ends, remove the peel, wash thoroughly and chop coarsely.
- grinding – If you like it, you can prepare it by grinding it coarsely.
- Milk Boil milk well, cook on low flame for a few minutes, only then add carrot paste.
- Cashew While grinding, you can add almonds instead of cashews but blanch it and remove the peel and then grind it with carrots.
- replacement – For a tasty kheer, you can replace sugar with ½ cup condensed milk.
- crazy – You can also add cashews or other dry fruits fried in ghee. This kheer tastes good in itself but if you want, you can also add raw chopped dry fruits as garnish.

Enjoy Gajar Ki Kheer as a dessert after your meal, hot or cold as per your choice. Store in the refrigerator for later use, keeping well at room temperature for one day and in the refrigerator for 2-3 days.
