About Gobi Pepper Fry
Cauliflower chili fries are made using cauliflower, peppers, onions, spices and herbs. It is very easy and quick to make it for lunch or even with roti. You can also serve it with sambar rice or rasam rice or curd rice as it goes well with all types of rice and even plain phulka.
A few weeks ago on Friday when I was already in the weekend mood, I had no plans but after sending Mittu to school suddenly I felt like clicking something. I had cauliflower on hand, so I quickly consulted a Chettinad cookbook and made this recipe. Pulled props from a pile of props that my hands could easily hold and created this shot.

Cauliflower Pepper Fry Ingredients
- Cauliflower – Choose a cauliflower, clean it, if there are any bugs, put it in hot water.
- spice powder – Roast cinnamon, cloves, black pepper, cumin, coriander seeds and red chilli and grind it a little coarsely.
- Onion – Cut and fry the onion.
- turmeric powder- Turmeric powder is added for color and taste.
- Tadka – The oil is heated, mustard seeds are popped, then curry leaves and garlic are added.

How to Make Cauliflower Pepper Fry Step by Step
1. Dry roast the ingredients listed under ‘To roast and grind’ until a pleasant aroma emerges. Cool and grind it a little coarsely – I used my hand mortar and pestle to do this. Cut the cauliflower into small pieces, soak it in lukewarm water for a few minutes, drain the water and boil the cauliflower with turmeric powder and salt until soft.

2. Drain the water and add half the roasted and ground powder to the cooked cauliflower and marinate for 15 minutes. Heat oil in a pan – add the items listed under ‘To temper’, let it splutter, then add garlic, onion and fry until golden brown.

3. Then add marinated cauliflower and fry for 2 minutes. Add the remaining masala powder and fry for a few minutes until the cauliflower is well coated with the masala. Switch off.

Serve with hot rice and sambar or any kuzhambu of your choice.

Expert Tips
- It is important to cut the flowers a little smaller, only then the spices will mix well with the vegetable.
- It is a little spicy, so adjust the red chilies according to your spice level.
- You can also grind the masala powder in bulk and use it whenever you want but freshly ground masala always tastes great.
- Usually for other vegetables, if I am cooking them separately I reserve the cooked water and add it while making the curry. But for cauliflower, I dry them to get rid of insects and even pesticides as cauliflower has high risks.

Cauliflower Pepper Fry can be enjoyed with rice or roti. It keeps well in the refrigerator for up to 1 day, reheat and serve.

- 1 small sized onion finely chopped
- ¼ small spoon turmeric powder
- salt to taste
