The texture of these cookies can be soft or slightly crunchy, depending on how you cook them. It has a deep flavor of brown sugar and honey and the spices give a rich and slightly earthy flavor and when cooked the aroma fills the entire kitchen and tastes delicious.

I usually make this recipe during December, I like to decorate it in a simple way and store it in a jar. It feels good to prepare cookies at home and they remain good for a few days.

- Flour – To make this, I have used wheat flour, you can also use all-purpose flour or use a mixture of both.
- butter -Butter is used at room temperature and it helps to make the dough smooth. It has richness and gives a soft texture to the cookies.
- Honey Honey is added for mild sweetness and it also gives a mild sticky texture to the dough. If you want deeper taste you can use jaggery.
- Brown sugar – It adds color and light caramel flavor and it also helps keep the cookies soft.
- Egg – Eggs are used to bind and give structure to the dough. You can replace it with milk for an eggless version if necessary.
- cinnamon powder – It is added for a warm flavor and gives that classic gingerbread taste.
- ginger powder Ginger powder is the main flavor in this recipe and it gives a mild spicy taste. You can adjust based on your taste.
- clove powder – I have added clove powder and it tastes strong. Put very little as it can go very fast.
- freshly ground black pepper – It has a slight heat and balances the sweetness.
- nutmeg powder -Nutmeg gives aroma and it enhances the flavor of the spice.
- breaking sugar – Icing sugar is used for decoration and it gives a smooth finish.
- Milk – Milk is added little by little and this helps in making the icing in the right consistency.
- food coloring – I have used less food color for decoration and you can use any color or leave it out.

- chilling the dough – I usually refrigerate the dough for at least an hour and this makes the dough firmer. This makes rolling easier and the dough will not stick too much.
- rolling evenly – Try to roll out the dough evenly and this will help all the cookies bake at the same time. Some cookies may cook faster if it is uneven.
- don’t overbake – When the edges start turning brown, keep checking and remove. It may look soft but will harden once it cools.

Material
- 1 cup Flour*
- ¼ cup butter
- ⅛ cup Honey
- ¼ cup Brown sugar
- 1 No Egg
- one and a half small spoon cinnamon powder
- 1 small spoon ginger powder
- ⅛ small spoon clove powder
- ⅛ small spoon freshly ground black pepper
- ⅛ small spoon nutmeg powder
*I have used wheat flour, you can also use all purpose flour.
For the icing:
- ⅓ cup breaking sugar
- A drop food coloring
- 1 tablespoon Milk (only less may be required)
Instruction

In a mixing bowl add butter, honey and brown sugar.

Cream it well using a whisk or hand mixer. Drive an egg into a separate bowl.

Beat it well and add it. match it.

Add flour and spice powder to a sieve, sift it directly into the butter sugar egg mixture.

Beat to bring together, do not knead. I used the spatula here to bring it together into the dough.

Wrap it in cling wrap and keep it in the refrigerator for at least an hour. Then roll the cookie dough between 2 pieces of parchment or butter paper.

Cut out cookies using gingerbread cookie cutters.

Carefully take out the gingerbread cookies and place them on a baking tray lined with butter paper.

Now remove the extra things and repeat the process.

Preheat the oven at 180 degrees Celsius for 10 minutes.

Bake in the preheated oven for 12-15 minutes or until the edges are brown. Cool the cookies.

Meanwhile we can prepare the icing. Add icing sugar, food color and milk in a mixing bowl. – While adding milk, add it little by little. Mix well to make a smooth thick flowy icing.

Form a cone, fill it with icing and decorate with gingerbread cookies. I also used some colored sprinklers.
