When my friend came home with me I made Paneer Jalfrezi Carrot Kheer. I also made it Vegetarian Pizza And my friend asked if the base was also homemade because it was very soft and yes I have started making homemade pizza since a few years.

About Paneer Jalfrezi
‘Jhal’ in Bengali means hot and spicy and ‘Frazee’ means stir fry, hence Paneer Jalfrezi basically it is a spicy stir fry dish made with paneer. There are many variations of this dish with mushroom, chicken, baby corn etc.
The key to perfect jalfrezi is the crispness of the vegetables, so don’t overcook. I love the combination of vegetables used with paneer, it tastes great. You can serve Paneer Jalfrezi with rotis or even use it as a stuffing for rolls, wraps or sandwiches.

Paneer Jalfrezi Ingredients
- Cheese – Choose soft fresh cheese so that it does not break easily while frying.
- vegetables – I have used onion, capsicum and tomato puree. You can also use chopped tomatoes.
- ginger garlic paste – Ginger garlic paste enhances the taste of curry.
- tomato sauce – Tomato sauce adds spicy flavor so don’t miss it.
- Masala Powder – Red chilli powder and garam masala powder are used here.
- Cumin – Cumin is added while tempering.

How to make Paneer Jalfrezi step by step
- Heat oil, add cumin and let it splutter. Add onion and ginger garlic paste and fry until light golden.
- Now add tomato puree and fry until the raw smell comes out, it may take at least 5 minutes. Add chilli powder, garam masala powder and tomato sauce. Add salt as required.
- Then add carrots and fry for 2 minutes, then add 3 tablespoons of water and keep covered to cook. When the carrots become a little soft and crisp enough to bite, add capsicum to it and stir vigorously.
- Add the paneer pieces and mix well until the paneer pieces are well coated with the gravy. Let it cook for 2 minutes and then turn it off.
Expert Tips
- You can add any veggies you like, you can add corn, beans, cabbage – it’s totally your choice to go with the veggies.
- Make sure to cook the vegetables with a crunch so that they do not become too soft.
- Cut all the vegetables thinly and lengthwise so that they cook quickly and become crispy.
- You can also use readymade tomato puree. I used freshly made homemade puree.
service and storage
Paneer Jalfrezi serves as a side dish for roti, pulao, rice etc. It keeps well in the refrigerator for up to 2 days, you can reheat it and serve.

- 200 Gram Cheese
- 1 Small Carrot (cut lengthwise)
- 1 medium sized Onion (cut lengthwise)
- one and a half medium sized Capsicum (cut lengthwise)
- 1 tablespoon Oil
- 1 small spoon ginger garlic paste
- one and a half cup Tomato Chutney
- 1 tablespoon tomato sauce
- 1 small spoon chilli powder
- one and a half small spoon garam masala powder
- one and a half small spoon Cumin
- salt as required
