Expert Tips
- picking strawberries – I use ripe strawberries for better sweetness and taste. Sour people may need a little more sugar to balance the taste.
- consistency of curd – I prefer thick yogurt so that the popsicles become creamy and smooth. If the curd is thin then it may turn out to be icy rather than soft.
- layering properly – I add the strawberries and yogurt slowly for layers and a better look. If mixed rapidly it may be completely mixed and the layers will not be clearly visible.
- cooling time – For best results and proper setting I keep it on at least overnight. Short freezing times may not set properly and may break during demolding.
- removing popsicles – I run the mold under water for a few seconds and it helps remove it easily. This helps in removing the popsicles without breaking the shape.
serving and storage
Serve it cold straight from the freezer for best taste and texture. It also tastes good as a summer dessert or as an evening meal after meals. Keep leftover popsicles in the freezer and use them within a few days. Keep it covered so that other odors coming from the freezer do not enter it.
