    Suryakala Chandrakala is a sweet made by filling dough balls with khoya, fried till crisp and soaked in sugar syrup. The outer layer of this recipe is crispy and the inside is soft which makes it very special to eat. Its shape is similar to the Sun and the Moon, hence it is called Suryakala and Chandrakala.

    This recipe is usually made during festive times and special occasions at home. After frying, the sweets are dipped in sugar syrup which gives mild sweetness and shine. It takes a little time to prepare but the result is worth all the effort. You can make this recipe when you want to try something different from the usual sweets.

    About Suryakala Chandrakala

    Suryakala Chandrakala is a popular sweet made by filling khoya mixture inside maida dough. The dough is shaped in two styles, one like a full moon which is Suryakala and the other like a half moon which is Chandrakala. These are deep fried until golden and then soaked in sugar syrup.

    Both Suryakala and Chandrakala sweets get their name from their shape. Suryakala is ‘Suryan’ which is sun shaped and Chandrakala is ‘Chandran’ which means moon, hence it has a half moon shape.

    The outer layer is crispy while the inside remains soft and rich. Khoya gives the main base for the stuffing and makes it creamy in texture. The dry fruits added to the stuffing add light crispness and more flavour. Also, cardamom powder gives a mild flavor which blends well with the sweetness.

    There are a few variations to this recipe. Some people make it without syrup while others soak it for a long time for more sweetness. You can also vary the stuffing by adding different nuts or a little coconut. The shapes can also be made in a simpler way if you do not want elaborate folds.

    I usually make sweets at home during festivals. It takes a little effort but the taste is very satisfying and everyone in the house likes it.

    • maida – I have used flour to make the outer cover of this sweet. It helps in making smooth dough and gives crispy texture after frying. You can also add some wheat flour if you want variety.
    • Ghee – I added ghee while mixing flour. This helps in making a soft dough and gives rich flavor to the outer layer. You can also use oil but ghee gives better taste.
    • Oil – I used oil to fry the shaped sweets. It cooks evenly and has a golden color from outside.
    • Sugar – I used sugar to prepare the syrup. It adds sweetness and light layer to the sweets after frying. You can adjust the quantity based on taste.
    • Water – I used to work in making syrup and also in kneading flour. This helps in achieving the right consistency. While kneading the dough, keep mixing little by little.
    • Saffron – I added some saffron strands to the syrup. It gives light color and mild taste to the sweet. If not available you can skip.
    • lost – I add it to make flour, it gives rich flavor and soft texture. You can also use homemade or store bought khoya.
    • mixed nuts – I have used only chopped cashews, almonds, pistachios and raisins for the stuffing, it gives crispness and rich flavor from inside.
    • Castor sugar – I just add sweetness to the filling and it goes well with the khoya. You can adjust the sweetness as per requirement.
    • cardamom powder – I add it for the sweet aroma. It balances the sweetness and adds flavor. It gives aroma to the stuffing. You can leave if you want.

    1. Crush khoya, add chopped nuts and powdered sugar.

    7. Now knead the dough well so that the dough does not tear and becomes very soft and smooth. Roll out into a thin sheet, cut with a lid. To make Suryakala: Take 2 balls and put 2 spoons of stuffing in the middle.

    10. Heat oil in a pan, add 2-3 drops of oil at a time and fry until golden brown. Cook on low medium flame. Strain and then add to hot syrup. Turn over and let it soak for 5 minutes, then remove from the syrup and keep in a plate.

    • one and a half cup Water
    • 4 Varieties Ochre

    Instruction
