The inside of this pan pizza is soft and the edges are crispy, although it doesn’t have the texture of an oven-made pizza, I’m sure you won’t complain much. Mittu and husband liked it very much and did not find any significant difference in it. When I pointed out that they discovered the pizza was made without an oven, that’s a win, right?!
The texture of this pizza is soft and crispy on the bottom. The toppings include roasted vegetables, sauce, melted cheese and give a balanced taste. It has masala flavor and that makes it different from regular pizza. It tastes more like home style. It is good to share with family.

I usually make this for weekend dinners or sometimes when guests come home. It is easy to make and tastes special when served hot. I used my lodge iron pan, you can also use dosa tawa, but it would be better to use an iron pan or tawa to get a crispy base and sides. I used homemade pizza sauce, so the taste was great.

Griddle Pizza Ingredients
- wheat flour – I have used wheat flour for this recipe which gives a soft base. You can totally use plain flour for a softer texture.
- white flour To make the base light, white flour is also mixed with wheat flour. You can skip that and use one flour alone.
- baking powder -Baking powder helps the dough to rise slightly and gives a soft texture.
- baking soda – To make the base soft and light, a small amount of baking soda is added to it.
- Sugar – Sugar helps in slight fermentation and gives a mild flavor to the flour.
- Oil Oil is added to the dough which makes it soft and easy to roll.
- Curd – Curd is used for softness and mild spicy taste. It also helps in fermentation.
- Salt – Salt is added for taste and balance.
- Water – Water is used to knead the dough soft.
- Capsicum – Capsicum is used for topping and it gives a little crisp and flavor to the pizza. It blends well with other vegetables and gives a nice texture.
- Onion – Onions add mild sweetness and texture to the topping and soften as they cook. It also helps in providing base flavor.
- baby corn – Baby corn adds good flavor and a little sweetness to pizza. I have roasted it before adding it so that it gets cooked properly and tastes better.
- oregano – Oregano gives the pizza a mild herbal flavor and simple taste. It goes well with cheese and sauce.
- pizza sauce – Pizza sauce gives the main flavor and a little spicy taste. You can use homemade or store-bought, depending on what you have.
- mozzarella cheese – I add cheese because it gives the classic pizza taste and cheese-like texture. This makes pizza even more delicious.
- chilli pieces – A little seasoning is added to the chili flakes and you can adjust to taste. It gives mild heat and balances the taste.
- Oil – Oil is used to cook vegetables and brush the base. This helps in uniform cooking and gives better results.

Expert Tips
- kneading– I knead the dough soft like chapatti dough and it should be smooth and not too hard or too loose, otherwise it will not cook well.
- resting dough – I leave the dough in a warm place for a few hours and that helps it rise a bit.
- cooking – I cook the base on low flame so that it gets cooked evenly from inside. I simply flip it and cook it on both sides before adding the toppings on it.
- adding toppings – After the base is half cooked I add the toppings and it helps in better cooking. With this, vegetables and cheese get cooked well.
- cover and cook – I always cover the pan after adding the cheese and this helps it melt. This helps the cheese melt nicely and evenly on top.
serving and storage
Serve it hot for best taste, it will taste good as dinner or evening snack. Keep leftovers in the refrigerator and reheat on a griddle before serving. It may become a little soft after storage but still tastes good.
