The first time I ate vada pav was during our college trip to Mumbai when my friend suggested I try it and I loved it. This is a famous chat item in North and it’s my favorite.

About Vada Pav
Vada Pav is a Mumbai classic street food consisting of fried potato fritters sandwiched between a pav bun with red chutney and green chutney. Potato pakodas can either be deep fried or pan fried like I did. Here vada means potato fritters and pav means pav bun.
Vada pav is spicy and full of flavor and texture. I love potato pakodas as is, so make some extra separately. The garlic chutney is the main attraction here, so don’t miss it, it is extremely tasty and spicy.
This is a very famous chat in North India especially in Mumbai and Kolkata. If you don’t get pav buns then proceed with normal buns.

Vada Pav Ingredients
- Pav bun – Pav bun is traditionally used for vada pav but you can use regular bun also.
- Potato Pakodas – Boiled potatoes are mashed, cooked with onions, green chillies and made into small balls.
- Gram flour batter – A batter is made using gram flour, rice flour, turmeric powder, red chilli powder.
- red sauce – To make chutney, grind garlic with red chilli, coconut, tamarind and salt.
- green chutney -Green chutney is made using mint leaves and coriander leaves.
How to make Vada Pav step by step
for vadas
1.Heat oil, add mustard seeds and cumin seeds, let it crackle. Add green chilli, ginger garlic paste and fry for a few minutes. Add onion and fry until light brown. Then add mashed potatoes, turmeric powder, salt as required and mix well. Add chopped coriander, mix well and turn off. – Let it cool and make small balls and keep it ready.


for vada coating
Mix gram flour, rice flour, salt, turmeric, chilli powder, baking soda. Add some water and make a paste like we make for bajji and bonda.


Now take the balls and dip them in flour paste and deep fry them till they turn golden brown (I did not deep fry them but toasted them in a paniyaram pan)


For assembling vada pav
Cut the buns from the middle and make sure one end remains connected to the other bun. Apply green chutney on one side and red chutney on the other side. Place the prepared vadas in the center as shown and enjoy your vada pav!

Expert Tips
- move forward – This definitely takes time but when you are ready with the chutney it is easy to make the vadas and assemble them as vada pav.
- Assembling – Usually vadas are nothing but our potato bonda. The combination of chutney and the form of vada pav gives a unique taste.
- toasting – I chose to toast the paniyaram in a pan, instead you can deep fry them as the original recipe says.
serving and storage
You can prepare potato pakodas, batter, chutney ahead of time. Then at the time of serving, fry the potato pakodas, assemble and serve. Serve it with fried green chillies for a great combo.

Material
- 4 Pav Buns
- 2 tablespoon See red chutney recipe below
- 2 tablespoon Green chutney as required
For Vada:
- 2 medium sized boiled potatoes
- one and a half small spoon Cumin
- one and a half small spoon finely chopped green chillies
- one and a half small spoon mustard seeds
- 1 small spoon ginger garlic paste
- 1 Onion medium sized finely chopped
- one and a half small spoon turmeric powder
- 2 small spoon coriander leaves
- 2 small spoon Oil
Vada for outer coating:
- ΒΌ cup gram flour flour
- 1 tablespoon rice flour
- one and a half small spoon chilli powder
- salt to taste
- a pinch of baking soda
- Oil for toast/deep frying
Red Garlic Chutney:
- 5 tablespoon Coconut
- 1 red chilli
- 4 garlic finely chopped
- 1 small spoon Tamarind
- salt to taste
Instruction
For Vada:

Dry roast coconut and tamarind until they turn light brown. Grind with all other ingredients. Do not add water, it is a little sticky and dry.

For Vada Pav Assembling:

Take the bun and cut it into two parts, making sure one end is still attached to the other bun.

Apply green chutney on one side and red chutney on the other side. Place the prepared vadas in the center as shown and enjoy your vada pav!
