    Vazhaipu Vadai is a delicious and tasty vadai made with banana flowers, chana dal, curry leaves, onion, spice powder and coriander leaves. Also known as Banana Blossom Fritters, this South Indian delicacy is now making its way into the buffet menus of star hotels.     Vazhaipu Vadai is my favorite or to put it this way, I love anything made with Vazhaipu. Amma cooks Vazhaipu Vadai in a different way Which I have posted before but I wanted to try it like ours Masala Vada.

    About Vaazhaipu Vadai

    Vazhaipu Vadai is a dumpling made using banana flowers, onion, chana dal, curry leaves, spice powder etc. It is crispy, tasty and delicious. It takes time and effort to clean banana blossoms but I would say the time and effort is worth it. Must try this Vazhaipu Vadai and enjoy!

    I had vada paruppu which my friend gave me so I ate vada with it last month and it turned out very crispy and tasty. i usually make Vazhaipu Poriyal But make vazhaipu vadai sometimes. If you are trying to feed vegetable to kids then you can try this vadai, I am sure they will love it as it is crispy.

    • banana flower – Choose medium sized banana flower. Clean it thoroughly, wash it and then use it.
    • Chickpea lentil – Chana dal is added to create binding and also adds texture and flavor.
    • Onion -Onion is chopped and added.
    • fennel seed powder Fennel seed powder enhances the taste of Vadai.
    • rice flour – To bind the vadai and make it crispy, rye flour is added to it.
    • red chilli – Red chilli is added for spice.
    • Curry leaf – Curry leaves are plucked and added for taste.
    • coriander leaves – Coriander leaves are added for taste.

    How to make Vazhaipu Vadai step by step

    1.Clean the vazhaipu and chop it finely. Soak chana dal in water for at least 1 hour. While you do other things, keep the chopped vazhaipu soaked in water + a spoonful of buttermilk to prevent browning.

    2. Drain the water, then add gram dal and red chilli in the mixer and grind it coarsely. Drain the water completely, just squeeze and remove the excess water from the vazhaipu and grind immediately for the vazhaipu (just one or two pulses) and put it together in a mixing bowl.

    3.In a mixing bowl add vazhaipu, chana dal, onion, curry leaves, fennel powder, rice flour and required salt. Mix well to make a consistency of dough. Shape them into medium sized patties/vadas.

    4. When you shape the vadas, heat the oil. Put a small pinch of flour in the oil, if the flour comes up immediately then the temperature of the oil is perfect. Drop the vadi (can be 2-3 at a time) into the oil and turn from both the sides and cook until well browned and crisp. Fry the vadas on medium flame. Take out in tissue paper.

    Expert Tips

    • I had fennel seed powder ready so I used that. If you are using fennel seeds then grind it and mix it with chana dal and red chilli.
    • I used vada paruppu instead of chana dal as it was what I had on hand. If you are getting vada paruppu at your place, do not forget to try it in the form of vadais, it will definitely make a difference.
    • – Cook on medium flame otherwise it will not cook inside.
    • Drain the water completely from the vazhaipu, squeeze to remove excess water. If there is moisture in the flour then the vadas will absorb more oil.
    • Also squeeze the onion to remove water and then add it to the mixing bowl.
    • I fried some vadi for the click and kept the rest in the fridge for later use.
    • Grinding the vazhaipu is optional but it will help in maintaining the shape otherwise it will start spreading in the oil. Also, rough texture gives crispy vadi, hence grind chana dal coarsely.
    • Add salt and onion just before frying the vadas, otherwise the vadas will leave water.

    Vazhaipu Vadai can be served as a tea time snack or along with a meal. The prepared vadai mixture can be used by keeping it in the refrigerator for 2 days.

    Material

    • 1 and ½ cup Clean and cut the vazhaipu/banana flower.
    • ¾ cup Chickpea lentil

    • 2 dried red chilli
    • 1 tablespoon curry leaves torn
    • 1 tablespoon green coriander finely chopped
