about 1000 island dressing
The name probably comes from the Thousand Islands in the St. Lawrence River between the United States and Canada. In the Thousand Islands area, a common version of the dressing’s origin says that Sophia Lalonde, the wife of a fishing guide, created the seasoning as part of her husband George’s shore dinners. Often in this version, actress May Irwin requested the recipe after enjoying it. Source : wikipedia.

Expert Tips
- The original recipe uses mayonnaise, I wanted to make it lower fat so used thick yogurt.
- There are lots of variations to this – you can either use pasta, or any kind of beans like chickpeas, red kidney beans etc along with vegetables.
- You can even make the dressing the day before and refrigerate it and add the other ingredients when serving. Always serve the salad immediately after it is prepared to maintain the crispness of the vegetables.
- Add more tomato sauce if you like it sweeter. The original recipe called for kosher salt, I omitted it and used regular salt.
serving and storage
Serve it hot as is or with toasted bread. I would recommend consuming it fresh. If you want to store, store the sauce separately in the refrigerator and mix it with the pasta when serving.
