We usually make plain salty vermicelli along with sweet vermicelli. Sometimes I also make this lemon vermicelli. Although I like it sweet version I can eat it with the sweet version. Hubby loves anything salty, so of course this is his favorite too, and Mittu is like me, he likes the sweet version.

Lemon Vermicelli is made by first preparing rice noodles, then cooking it with seasoning ingredients and finally adding lemon juice to give it the tangy flavor and taste of lemon. Lemon Vermicelli is a simple lemon flavored vermicelli and you can make many types of vermicelli with it.

- Idiyappam – You can use home made rice noodles or buy them from stores.

How to make Lemon Sevai step by step
1.Prepare Idiyappam. Cool it and then separate it and keep it aside. Heat oil in a pan – add the ingredients listed under ‘For tempering’, fry until the dal becomes crisp and the peanuts turn golden brown. Then add turmeric powder, asafoetida and fry for a minute.

2.Add idiyappam, required salt and stir vigorously. Finally add lemon juice and turn it off.

Serve hot with coconut chutney or chutney of your choice!

Expert Tips
- You can soak chana dal in water for a few minutes to make it soft and then use it for tempering also.
- I usually add lemon juice and switch it off immediately to avoid bitterness.
- If you wish, garnish with coriander leaves.

- 1 and ½ cup Idiyappam
- 1 tablespoon lemon juice
- 1 generous Pinch turmeric powder
- one and a half tablespoon peanuts
- salt to taste
