Trying new varieties of rice has become a routine these days. I had bookmarked this peanut rice recipe from a cookbook long ago and suddenly remembered and made it last week. This turned out to be great one pot rice. You can serve it as a side dish with any vadam/papad. In Tamil we call it Kadalai Sadam.

Peanut Rice Ingredients
- Cooked rice – I have used parboiled rice cooked by filtering method. You can also use basmati rice.
- fry and grind – Peanuts are used by roasting them with urad dal, sesame, red chilli and coconut and grinding them coarsely and making powder.
- tempering – Tadka is made from peanut oil, mustard seeds, curry leaves and peanuts.

How to make Peanut Rice step by step
1. First add all the ingredients except coconut and fry the peanuts until they become light golden, then add the coconut and fry until the peanuts become golden brown and the coconut dries.

2.There is no need to brown the coconut. Cool the mixture completely and then pour it into the mixer jar. Grind the mixture slightly coarsely.

3. Heat oil in a pan – add the items listed under ‘For tempering’ and let it splutter. Now add rice, peanut mixture and tadka along with salt as required in a mixing bowl. mix well.

Peanut rice is ready!

Serve rice with hot papad/chips! Delicious peanut rice is ready to serve!
Expert Tips
- You can make the masala powder a day ahead and mix it to pack for lunch the next day.
- While grinding, grind only the dal after mixing it, otherwise the masala powder will become sticky.
Adding one spoon of oil while mixing rice helps in maintaining moisture in the rice. - If you do not have peanut oil then replace it with gingelly oil or normal cooking oil.

Peanut rice can be served with papad or any thogayal. Peanut rice keeps well in the refrigerator for up to 1 day, reheat and serve.

- ¼ cup peanuts
- 1 small spoon urad dal
- 1 tablespoon mole
- 2 red chilli
- 2 tablespoon Coconut
To get angry:
- 2 small spoon peanut oil
- half and half small spoon mustard seeds
- some curry leaves
- 1-2 tablespoon peanuts
