Almond Popsicle is inspired by the popular almond milk made in many South Indian homes. Almond milk is often prepared for festivals and family gatherings. This is a simple homemade dessert made with basic ingredients, many families make similar frozen treats during the holiday season.
Almonds provide the main flavor in this recipe and also make the popsicles rich. Milk helps in giving a soft and creamy texture. Saffron gives a mild aroma and attractive color to the popsicle, along with the sugar balances the overall flavor and sweetness. Once frozen, the popsicles turn out creamy and taste really good.
You can add some cardamom powder for extra flavour, you can use honey or palm sugar instead of white sugar and adding chopped nuts adds a crunch to each piece. You can add khoya to it for a thicker texture, some people like it a little lighter. It can be served after meals or as a dessert in the evening.
I usually make this during peak summer when the weather gets very hot. My family enjoys it after lunch and it goes away very quickly. After keeping it in the freezer, everyone waits for it.

- Almond – I have used almonds as the main ingredient and it gives a rich nutty taste. It also makes the texture creamy and filling.
- Sugar – Sugar to balance the sweetness and taste in the popsicle and you can adjust as per your taste.
- Milk – Full fat milk gives better results and creamy finish. It gives smooth texture and forms the base for popsicles.
- Saffron – I have added saffron for mild aroma and colour. If not needed, you can leave it out, although the taste will change slightly.

How to Make Almond Popsicle Step by Step
1.Put almonds in the mixer. Mix sugar in it.

2.Add saffron to the mixer. Grind it finely. Mix this mixture in boiled milk.

3.Let it boil for 5 minutes.

4. Let it cook for some more time so that it becomes a little thick and creamy. Switch off and cool completely. Wash your popsicle mold and have it ready in the meantime.

5. Pour the milk mixture into the mould. close with lid

6.Close the lid and freeze for at least 8 hours or overnight. Then while serving, keep the mold under running tap water or immerse it in a bowl of water. Carefully take out the popsicles.

- do not overfill -Leave a little space at the top of the mold. The mixture expands slightly when frozen.
- freeze overnight – I’ve found that freezing overnight gives a better shape and texture. Low cool down time may not be set properly.
- carefully remove from mold – Expose the mold under running water for a few seconds. The popsicles come out easily without breaking.
