About Cornflakes Mix
Cornflakes Mixture is a snack made using cornflakes, peanuts, fried chana dal, chilli powder, cashew nuts, raisins, curry leaves, oil and ghee. It is prepared quickly and tastes very crisp and tasty. This is a very easy snack that you can make for children, it is not too fried so a healthy snack is ready in minutes.
Last time I went to meet Soumya, she gave me a sweet mixture of cornflakes, I liked the taste of it very much. But since husband likes spicy mixture more, I have added very less sugar this time… You can also increase the amount of sugar and enjoy it as sweet mixture.

Cornflakes Mix Ingredients
- Cornflakes – Choose the dry cornflakes variety used for frying.
- fried gram dal -Fried gram dal is added for crispness and taste.
- dry fruits – Cashews and peanuts are roasted and added.
- Raisin – Raisins give a nice sweet taste to the mixture.
- chilli powder – Red chilli powder is added for spice.
- Curry leaf – Curry leaves are roasted and added.
- oil, ghee Oil and ghee are used for frying spices.

How to make cornflakes mix step by step
1. Preheat the oven at 180 degrees Celsius. Place butter paper in a baking tray, then spread a layer of corn flakes and bake it at 180°C for 5 minutes, stirring occasionally, until golden brown, keep aside. Similarly, repeat the process separately for fried chana dal and peanuts. Collect peanuts and gram dal with cornflakes and keep aside.

2. Add a spoon of ghee in a wide pan and fry the cashews and raisins till they turn golden brown and keep aside. Then add one spoon oil in it and also add curry leaves along with red chilli powder and salt. Mix well, add cornflakes and dry fruits, raisins and stir until the spices mix well with the mixture.

Cool it, store it in an airtight container and enjoy your guilt-free breakfast! Serve as a snack with hot coffee.

- Baking times vary from oven to oven so be careful when baking. Bake it while standing nearby and stirring it occasionally, because it burns easily. Yes, experience speaks that I burned my first batch and then started clicking with fresh cornflakes.
- Adding sugar is completely optional.
- If you like the taste of garlic then add 1 crushed garlic clove along with curry leaves.
- You can also add ¼ cup poha in it, bake it and use it like this.
- Raisins give a nice crunch while eating so do not skip it.
- If you have more cornflakes, bake them in 2-3 batches.
- You can also pan fry all the ingredients but baking adds extra crispiness.
- It remains good for up to 2 weeks if stored in an airtight container.

- 1 small spoon Oil
- 1 small spoon Ghee
- salt to taste
