About Keerai Poriyal
‘Keerai’ in Tamil means spinach and ‘poriyal’ is a word for any simple fried dish, hence Keerai Poriyal is a simple fried dish made of spinach. You can use any type of spinach for this stir fry.
Spinach stir fry can be made with or without coconut. If you are packing for a lunchbox then you can use coconut so that it remains good for a long time. You can make any stir fry with this recipe. Use any vegetable of your choice, cook and temper it.

- spinach – You can use any variety of greens or spinach for this stir fry.
- Onion – Onion has been fried with tadka.
- Coconut – Grated coconut is added in the last step.
- Tadka – A basic simple tadka is made using oil, mustard seeds, urad dal and green chillies.
- Sugar – Sugar is added for balance, this also helps in maintaining the green color.
How to make Keerai Poriyal step by step
1.Clean the greens, remove the root part and wash the leaves thoroughly. Keep aside. Heat oil in a pan, add mustard seeds, let it splutter, then add urad dal and fry for a minute. Then add green chillies and onions and fry until they turn light brown.

2. Then add green vegetables with necessary salt. Place on medium flame and keep stirring until the quantity of saag reduces, sprinkle some water. Keep closed and let the greens cook.

3.Vegetables will release water so be careful while sprinkling water. Add a pinch of sugar to it to retain the green color while cooking. When the greens become soft and cooked, add coconut and turn it off. Stir vigorously and transfer to serving bowl.

- Adding sugar keeps the green color of spinach intact while cooking.
- Raw coconut does not contain cholesterol so I always add coconut and stop immediately. But if you are packing, then fry the coconut for 2 minutes and close it to avoid spoilage.

- 1 small size Onion
- 3 tablespoon grated coconut
- ¼ small spoon Sugar
- salt to taste
