    Masala Vermicelli is a delicious and filling snack made by sautéing vermicelli with spices, onions and tomatoes. Masala vermicelli is an alternative to regular vermicelli and is liked by everyone. Learn how to make Masala Sevai with step by step pictures.

    Sevai or Idiyappam is a traditional breakfast in Kerala. I like all varieties of vermicelli either plain vermicelli or Sweet Idiyappam with Sugar Or Lemon Vermicelli. This masala vermicelli is one of my recent favourites.

    About Masala Vermicelli

    Masala Sevai Idiyappam is made using onions, tomatoes herbs and spices. A lot of spices are added to it, hence it is named Masala Vermicelli. It can be served for breakfast or dinner, it tastes great on its own, it does not require any side dishes.

    Last time we visited my sister’s place, she served this along with other breakfast items. As soon as I tasted it, I loved it because it had all the flavors I loved. So I took the recipe from them and recreated it in my kitchen and here is the recipe for you all.

    Masala Vermicelli Ingredients

    • Idiyappam – I have used homemade idiyappam. You can also use store bought readymade idiyappam.
    • onion, tomato – Fry onion and tomato properly and use it.
    • spice powder – Turmeric, red chilli and garam masala powder are used.
    • tempering Oil is heated and then tadka is made with fennel, curry leaves, cinnamon and cloves.
    • method of decoration – Coriander leaves are used for garnish.

    How to make Masala Idiyappam step by step

    1.Cook the Idiyappam and let it cool for some time. Crush it so that it separates, keep it aside. Heat oil in a pan – add the items listed under ‘For tempering’, let it splutter.

    2. Then add ginger garlic paste, onion and fry for 2 minutes, then add tomatoes, mint leaves and fry until the raw smell goes away. Then add turmeric powder, red chili powder, garam masala powder and salt as required.

    3.When it mixes well, add idiyappam and mix well. Finally garnish with coriander leaves and close.

    Expert Tips

    • Adding spice powder is completely your choice. If you do not want the taste of whole spices then add mustard, cumin seeds and add sambar powder which will give a different taste.
    • Mint leaves give a nice twist to this masala idiyappam so don’t skip it.
    • Idiyappam dries fast so serve immediately after cooking or within an hour.

    Masala Idiyappam can be served as is or with coconut chutney. It keeps well in the refrigerator for up to 1 day, reheat and serve.
