Neeragram or Pazhayathu is a nutritious breakfast made by soaking rice overnight and garnished with buttermilk, raw onion, green chillies, pickles etc. Neeragram is the diet of most of the South Indian villagers which keeps them energetic throughout the day and keeps them cool even when they have to work in the scorching heat all day long.
I never thought of posting Neeragram here. Full credit for this post goes to my best friend husband who suggested me to post it. I kept putting it off because I didn’t have clay pots. Last week I received them and proceeded to create and click it.

Neer + Aagaram – Water based food. Most of the South Indian villagers and farmers have this diet in their homes which keeps them energetic throughout the day and also keeps them cool even when they have to work in the scorching heat all day long. They deliberately make more rice than required so that they can use the leftover rice for breakfast the next day.
I must admit that this is almost forgotten in our fast-paced lives, where ready-made porridge and cereals are used as per our convenience. The crispness of onions and the hot spicy chillies make it the best combination. It is mostly eaten for breakfast and is so delicious that you will not feel hungry for the next 4-5 hours.
This is the best natural summer coolant for breakfast. So what are you still waiting for?! Don’t throw away the leftover rice and enjoy this cold Neeragram.

- leftover rice – When you have rice left, soak it in water overnight.
- buttermilk To make buttermilk, curd is mixed with water and whipped well. This buttermilk is served mixed with soaked rice.
- Salt – Salt is added for taste.
- compatible – Pickles, raw small onion, green chillies are the main side dishes. You can serve it with fish curry or any tamarind based curry.

How to draw Neeragram step by step
1. Soak leftover rice in water overnight. Next morning, drain some water and add buttermilk/curd to it. Mash it well with a ladle. Add a little more water to bring it to a porridge-like consistency.

2. Add necessary salt, finely chopped onion and green chilli and mix well. Put it in earthen pots and leave it for some time. Serve it.
Pickle is the best combination for this otherwise fish curry is a suitable combination, especially made the previous day.

Expert Tips
- It is best to use leftover rice for this Neeragram. If you are using fresh rice, let it rest for 2-3 hours and then soak it.
- Actually Neeragram is just water and rice but to enhance the taste we can add buttermilk/curd to it.
- Earthen utensils are natural coolants, hence serving in them gives a feeling of coolness.
- You can also add green coriander, curry leaves for garnishing and additional taste.
- I removed the seeds almost completely to reduce the spice level in the green chillies.
- There is no need to refrigerate it.
serving and storage
Since we are using leftover rice, it should be served the next morning. Soak it overnight for next day’s breakfast.
The picture below was just for the birth experience so our apartment maid was asked to pose for it and she did it with great enthusiasm.

- ¼ cup Water
- ¼ cup buttermilk
- 4 small onion roughly chopped
- 1 finely chopped green chillies
- salt to taste
