Would anyone be surprised when I say that I tasted tacos for the first time only 2 months ago? Hope I’m not alone ЁЯЩВ I ate tacos at a lunch buffet at a restaurant and I loved it.

About Mexican Tacos
Tacos are a crispy snack made with taco shells and a filling of red kidney beans and cheese. It can be served as a snack or starter. The crunchiness of the tacos, onions and sauce combined with the beans makes it a perfect starter.
When I googled it I was even more surprised to find out that there is a different taco shell manufacturer. But I have an option to make the shells using a tart pan like the one I saw in that restaurant.
Coincidentally when I saw a pack of taco shells in a nearby supermarket I took it without thinking, followed the recipe given on the back of the pack and made a simple salsa with these tacos. This is the perfect light starter тАУ totally my kind of thing.

Mexican Tacos Ingredients
- Taco shells – You can use homemade taco shells or use store bought taco shells like I did.
- red kidney beans – A filling is prepared using red kidney beans, onions, tomatoes, sauces etc.
- Cheese – You can use grated cheese or mozzarella cheese.
- Other – Cumin, tomato sauce, black pepper are used.
How to Make Mexican Tacos
- Soak Rajma in water overnight for at least 6-8 hours. Pressure cook for 5 whistles until Rajma becomes soft. Cancel.
- Heat olive oil in a pan and add cumin seeds and let it crackle. Then add onion and fry until it turns light brown.
- Then add cooked rajma, black pepper powder, tomato sauce, salt as required and mix well. Once the rajma is mixed well and becomes spicy, turn it off. Sprinkle lemon juice and keep aside. Kidney bean salsa is ready.
- Now assemble the tacos with salsa : Take one taco shell, add one tablespoon of prepared kidney bean salsa to it. To cover the salsa, grate cheese and sprinkle some black pepper powder.
- Microwave it on high for 1 minute – it was mentioned on the carton. In my OTG I put in Bake mode and baked for 2 minutes at 200┬░C until the cheese starts to melt a little.

Expert Tips
- You can also add large tomato pieces, lettuce or bell peppers to the salsa.
- The variations are endless, you can even garnish it with coriander leaves
- Adding beans is totally your choice тАУ you can even mix the corn with any beans you like in the salsa.
serving and storage
Tacos are best served with salsa or cheese sauce. Serve it warm or hot. I would recommend making it hot and serving it fresh.

- one and a half small spoon lemon juice
- ┬╝ small spoon freshly ground black pepper
