Soya Chunks Biryani is a delicious one pot meal that is quick and easy to make. This is one of the quickest biryani to make because it does not require much chopping of onion and tomato, hence it is easily prepared. This biryani is best to pack for lunchbox also.

About Soya Chunks Biryani
Soya Chunks Biryani is an aromatic and flavourful biryani made from soya chunks, which is known as a meal maker. I saw this biryani recipe on a TV show which I adapted to suit my family’s tastes and it has been my favorite for years now.
You can also make soya chunks biryani with vegetables. Now I know that this biryani will be on our menu often, it can easily make its way into your kids’ lunch box too. This is healthy, nutritious and definitely delicious biryani combo.

Soya Chunks Biryani Ingredients
- Rice – Use of Basmati rice is best. However you can also use seraga samba rice.
- ginger garlic paste Ginger garlic paste is added for taste.
- spice powder – Red chili powder and garam masala powder are mixed.
- coconut milk -Coconut milk enhances the taste.
- Masala Paste – A paste is made by grinding tomatoes with mint, coriander leaves, black pepper and fennel seeds and is used.
- Tadka – Whole spices like cinnamon, cloves, cardamom, bay leaves and shahi jeera are tempered in oil and ghee.
How to make Soya Chunks Biryani step by step
1. Add one tablespoon milk and a little salt to 1 cup water and boil it. When it starts boiling, turn it off and add soya chunks to it and keep it aside for 10 minutes. Can you see it has now almost doubled in size.

2.Wash with cold water at least thrice to get rid of the raw smell of soya chunks. Finely grind the ingredients under the ‘To grind’ list. Cancel.

3. Heat oil + ghee – add ingredients under ‘To temper’ list, add ginger garlic paste, onion and fry until light brown. Then add red chilli powder and garam masala powder along with mint coriander paste. Fry until the raw smell comes out.

4.Then add soya and salt to it. Mix it well until the gravy mixes well with the soya. Soak the rice in water for 15 minutes. Drain the water and add the rice, stir vigorously.

5.Now add coconut milk, water and cook on low medium flame for 3 whistles. Once the pressure is released, uncover the rice and carefully fluff it with a fork.

Serve hot with onion raita!

Expert Tips
- Adding shahi jeera gives a nice unique taste. But if you don’t have it, just use normal cumin.
- Soya chunks in itself are completely bland, so it should be dominated by spices and masalas to give it a good mix.
- In the end you can also decorate with coriander leaves.
